  • Last step up ever
It is a fantastic pan, but exactly why? I bought this pan for numerous reasons, which were very important to me and may not be important to others. First I wanted something not made in China, which I could have gone with all-clad, made in USA of great quality, but the equivalent pan from them is close in price to what I've paid for this one. Second INDUCTION, induction, induction compatibility, which again all-clad and some others had, but demeyere is supposed to be better, and spoiler alert, it is by a lot. Third Once I've found out about welded handles, meaning no more scrubbing of those sometimes non Stainless Steel rivets was a deal closer for me. The experience with Demeyere Yes, it is heavy, but that gives it a huge advantage. The weight becomes thermal mass. Meaning, no cold crashing when you slap big piece of meat on it. Browning of meat becomes a literal joy compared to some cheaper, in quality, pans. Even the sides of the pan actually heat up, thus giving me more surface area to cook on, but also if you forget, pretty bad burns too. Deglazing is nice, and nothing really sticks unless you decide to make scrambled eggs. There is definitely a learning curve to cook with stainless steel and then with such a heavy pan. I definitely recommend watching demeyere promotional videos on youtube, and I can vouch for them being true. For example the pan, thanks to its thermal mass, cooks the food even if you turn off the power/gas for a long while. I use this pan with DUXTOP 1800-Watt Portable Induction Cooktop Countertop Burner 9100MC and it is crazy how big of a difference it is compared to electric stove and T-fal D91305 Signature Hard Anodized Nonstick Thermo-Spot Heat Indicator Fry Pan Cookware, 10-Inch, Black. There was and still is definitely a big learning curve for me as I am not a professional and have not had much experience cooking with stainless steel; however, I feel like it is hard to mess up cooking with this pan. I have yet to burn something and all the meat comes out tender and cooked great. Omelets and superb too. Cleaning the pan is very easy. It is fairly hard to get used to the pan looking off color when it is cleaned. It's just the way the stainless steel is. Some say to use either Demeyere Stainless Steel Cleaner or much cheaper Bar Keepers Friend® Cleanser & Polish: 12 OZ, I can't comment on either, as I haven't used them. To specify, only the cooking surface looks like this, not the outside of the pan. I am honestly fine with it, and there is no impact on flavor or quality of the cooked food. Conclusion It may seem like a lot of money at first, I agree; however, if you look at the competition, it is pretty much on par, price wise only. The quality of this pan for the price I paid is unsurpassed. If you have an induction top or thinking of getting one in the future, then this pan is a no brainer. 25 year warranty, welded handle, cooks on sides too, wash it when it's hot is ok, best induction cookware brand, big thermal mass. P.S. This thing hardly sticks, and if it does, really only with eggs. They scrape off easily, no soaking required. P.P.S. I was so impressed after using this pan that I've bought Atlantis 5.3-qt. Stock Pot with Lid and Demeyere 5-Plus Stainless Steel 4-qt Sauce Pan with Helper Handle it's the 3qt one, I couldn't find the link for it. P.P.P.S. Only buy Atlantis or 5 star product lines from demeyere, it's their flagship, the rest is "cheaper" quality. ... show more

I'm not really sure why my wife bought this as just was looking for an excellent non stick fry pan. This is not what I would call non stick. Not even close.

  • A very good cooking pan with a catch
I do a lot of home cooking to watch out for excessive oil, salt, sugar etc.etc. I cook different items such as fish, omelets, vegetable and more with this pan. So far it met my expectation, ie. brown and cook evenly even with low heat. The pan clean up easily. Just place some soapy water in the pan and let it sit after the cooking. Then clean up after dinner. However, for stubborn stuck on it is best to clean it with their cleaner. A few drop will do it nicely. The construction is study but not too heavy. The design is well balance if you decided to cook like a chef. The pan is really finished nicely even after many uses. The reason I gave it a 4 star is if you cook items like a cream sauce with flour material it will stick to the bottom, and I do not want to use soft scrub to clean this expensive pan. (It may destroy the finishes). You do need to use their cleaner. Otherwise, it worth every dollar I spend. ... show more

  • This may just be the best skillet on the planet
A brief history of my cookware journey: Twenty years ago I bought some Circulon cookware because they claimed to have figured out how to make non-stick surfaces last longer. Maybe, but scrubbing those little grooves left much to be desired. Then I bought some Calphalon because I liked the glass lids. (Hint: you can buy glass lids separately.) Then I took a detour to Sitram Cybernox, a French line of cookware. They claimed performance similar to non-stick from a full stainless pan. Well, it sort of worked, but the conductive disk on the bottom stopped 3/8" from the edge and so did the heat. Finally I bought All-Clad d5. Reviews rated it very highly, and it IS very good cookware. Well, at least until I tried Demeyere. My first test was to heat 4 cups (2 pounds) of water from 75 °F to 180 °F. I stopped at that temperature to insure the slight differences in the shape of the pans did not come into play. Heating was done on an 1800 watt induction burner to insure consistency. I used a Thermapen to measure the temperature. A 10" All-Clad d5 non-stick skillet weighing 2.55 pounds heated in 3:38. A 10" Sitram Cybernox stainless skillet weighing 2.58 pounds heated in 3:30. A 10" Demeyere weighing 3.78 pounds (yes, it's HEAVY) heated in 3:35. However, once you compensate for the additional mass of the pan (the specific heat of stainless steel is 0.12 BTU/pound/°F.) it turns out the Demeyere is transferring the heat about 4% more efficiently than the Sitram. My next test was to sauté a small onion diced to 1/4" in a little oil on medium-high heat until well caramelized, about 6-7 minutes. Because of the non-stick surface, the All-Clad d5 simply didn't develop any fond on the pan and it all stuck to the onions, leaving them less attractive. The Sitram Cybernox developed a nice fond, but it was not uniform on the bottom of the pan and did not de-glaze well. The Demeyere produced beautiful fond on both the onions and pan, and the pan de-glazed perfectly. This was a big win for the Demeyere. I was surprised to find the Demeyere, when sprayed with pam, could cook an egg over-easy with very little sticking, and as a bonus, it browned better than in a non-stick pan. I will up-date this part of the review after I get some more miles, and therefore more scratches on the pan. Scrambled eggs cooked beautifully. Better yet, because there are no rivets on the inside of the pan, the eggs can't stick to them. With a simple wipe of a wet washcloth, the pan was clean. About the handle: I wrote a review for a 20 quart Tramontina stock pot where I mentioned the importance of riveted handles for such a heavy pot. Only time will tell if the spot welds used by Demeyere have sufficient strength for this application. However, given the build quality of the pan my guess is: yes. About the handle: it is a thing of beauty. It fits perfectly in the hand, has a wonderful dimple for your thumb, and has a more comfortable angle than All-Clad. Another little bonus is that the pan is about 1/4" deeper than All-Clad, reducing the tendency of small items to slip out of the pan. This may just be the best skillet on the planet and you can still throw it in the dish washer. (sorry Mauviel) Clearly, my journey is over. ... show more
