Handle not attached to pan; serious quality control issues need to be resolved. I originally gave this pan 1 star because it left the Belgium factory without a helping handle attached to the pan. I received a replacement pan and it is in perfect condition. I used it 3 times and I love this pan. The pan is very heavy (6 lbs. 3 oz.) which I like. The thermal mass of this pan is similar to a heavy cast iron pan. I cooked a couple steaks and the fond was substantial and perfect no Burnt fond which made an amazing steak sauce. I purchased the lid separately and it is a perfect fit and something I would recommend buying. If you want an amazing very heavy thick (4.8mm) pan this is it. Side note I do have the All Clad D3 pan and it weights 2 1/2 time less than this pan and only has 3 layers compared to 7 layers Proline . I do like the All Clad D3 but this pan Demeyere Atlantis Proline is amazing for cooking steaks because of the thermal mass so this will be my pan of choice most of the time. ... show more

I use Ruffoni cookware set daily over the past 15 years and recently sent them out to get re-tinned. Side note, I would have opted to get Ruffoni copper cookware lined with SS if available back then due to costly re-tinning and shipping cost. While waiting for my pots and pans to arrive, I purchased a Demeyere skillet and Demeyere sauce pans/steamer basket to get me through daily cooking. I also own All Clad D3 and D5 skillets and pans and Lodge small cast iron skillets (I use to fry and serve eggs). All Clad has noticeable hot spots when I simmer sauce. Demeyere skillet heats up quick and I donโ€™t need to worry about forgetting to add/spray oil (I need to remember to add oil on Ruffoni tin-lined skillet before starting the heat), has even heat distribution and no hot spots. Two good things about Demeyere skillet, I can pan-sear and finish in the oven without worrying about temperature. With tin-lined ruffoni I canโ€™t use in the oven above 430F. Lastly, Demeyere Atlantis material is easy to clean. Sans costly re-tinning 10-15 years from now, ease of use and low maintenance, Demeyere Atlantis line is worth the money and will be my go to everyday cookware from now on. ... show more

  • This thing is a beast!

Makes you feel like a pro chef. Watch out though, this thing gets so hot you cannot use Extra Virgin Olive Oil. Use high smoke point oils, I use Costco's Avocado Oil or Brad's Organics.

Just received this 12.6 inch Demeyere Atlantis Proline stainless steel fry pan. Ordered because the base is supposed to stay flat. I tried other high end pans but they were not flat. Demeyere has a Youtube video showing how flat their fry pan is compared to another high end pan (looks like All-Clad). Yes, I am being very particular!! Upon unpacking I checked the base with a straight edge and it showed a clear 2 mm approx gap in the center. The base was bowed inwards. I decided to use it in case the heating would eliminate the dome effect. I followed the preheating instructions to the letter. Alas, the oil just slid to the sides leaving the center almost dry - see pic. Unacceptable to me for such an expensive pan. Returning it and asked for a replacement in the hope that mine was an odd one. Fingers crossed because I ordered a 12 piece set of Atlantis cookware from another vendor!!! ... show more

  • WOW - It Will Change Your World. We now refer to our All-Clad as the "Junk Pan"

What a wonderful fry pan! It is bit heavy but not so much that a single hand can't manage it. It weighs 3lbs 14oz. I can't imagine the weight of the 11" or 12" pans. This size is perfect for me but if you are cooking for 3 or more then maybe a larger size is needed. The inside cooking surface measures at 7 1/4" at the bottom and the inside diameter at the top is 9 1/2". This is a larger pan than you might imagine. From outside lip to lip it measures 10 1/2". This pan is rated higher than All-Clad in every review I could find (there are not that many) and is probably the best fry pan you can buy. A professional cook told me it was even heavier than what they used at his high end restaurant. It is the only pan I've ever seen that is given a 10 year warranty when used in a commercial kitchen (30 years for home use) and evidently the warranty is actually honored. Compared to my All-Clad, it heats a bit faster, more evenly and retains its heat far better. Honestly my 5 ply All-Clad seems second rate. There are some very in-depth reviews of this skillet complete with thermograms and it simply beats the All-Clad and is a near match for cast iron in heat retention . You will need to retrain yourself however. I never use any setting above medium and once you attain the temp you want, back it down, perhaps a minute after you add some cold food or the heat may continue to rise, no matter how much cold food you've dropped into the pan. The heat transfer and retention is amazing. You'll never need a cast iron fry pan again. Addendum: The pan does NOT have magical cleaning properties. As possibly the worst cook in the country I can speak with some authority that if you get this pan "searing hot" like a recipe told me to do - you get a steak turned instantly to charcoal and a blackened surface that no soaking, barkeepers friend will touch. Steel wool and 15 minutes got the mess off but I'm not looking for a "show pan" and it might be useful for me to learn how to cook. The even heating of this pan helps as I struggle to gain basic skills. My philosophy has always been if you are new to a craft get the best tools and the Demeyere is a "best tool". ... show more
