The height thing is a gimmick made up by someone who doesn't know anything about cooking. I've been doing pastry for decades, and measuring the height of something I'm rolling out is never a thing. However, I really love the mat and how you can keep track of the size of your dough, which I find helpful when trying to make consistent tortillas. I also really appreciate the dough scraper. And it's nice that the mat is dishwasher safe. I'm not risking the rolling pin in the dishwasher, though to be honest, I'm only interested in the mat and the dough scraper. When it comes to the rolling pin, I'll stick with my classic rolling pin.
