  • Well balanced knife set for a great price.
I never realized the value of a good kitchen knife until I bought one that cost me over $100. I thought it a lot to spend, but realized a good knife makes the job so much easier. You're not fighting with the knife, but working with it. I love to cook, but I'm by no means a "knife nerd" and couldn't tell you the technical specs like I can with a PC. Apart from sharpness, comfort and weight are key items for me. I happen to be left-handed and have small hands. Even though these knives are all metal, the weight was fine. One thing that appealed to me about being all metal is the handle would be sturdy. One knife of a very well known brand had been handed down to me. While the blade was sharp and great quality, the previous owner had put it too close to a gas flame and the handle deformed. I can't seeing this happening with this set. The flip side is you need to be diligent about keeping the knives dry. I've not used all the knives yet, but impressed so far. The chef's knife is great as well as the tomato knife and boning knife. I find the boning knife excellent for removing silver skin on pork tenderloin. As for the knife block...dang it's heavy and solid wood. I still haven't developed the "muscle memory" to know where each knife resides so I'm thankful for the cheat sheet that shows the knife's name and position. Each knife did come with a cardboard sheath and tip guard. I've not bought a large knife set before. While on the surface, the cost may seem high, I don't think so when you factor in each knife.   • Gorgeous , sharp, high end knives.
I bought these with the steel handles because my experience with black handles ( not from Canshan) is that they crack. They are beautiful. The handles are not the most comfortable, a bit more volume would have been better. The knives seem somewhat roughly cut, I have no other way of saying it but they are super sharp. DO believe it when they say to wash them by hand and dry them immediately because they WILL rust if you leave them wet. ... show more

  • Ultimate sharpness, durability, control
I'm very happy with this knife set. TLDR: These are among the finest available kitchen knives. These knives are literally as sharp as razors or scalpels. There's no other way to describe this level of sharpness. The video shows a 2mm tomato slice which is absolutely easy to do with any of the knives in the set. The knives have held their edge perfectly through 2 months of heavy use. The photos show the knives after this months-long period of use, not when they were new. Balance of the knives is good and they provide a secure grip, with overall excellent control. The weight tends to balance a bit towards the handle, and the knives are noticeably heavier than some of the other Cangshan knives (see comparison photo). This comes down to a matter of personal preference. If you like a solid feel and a bit of weight behind your knife strokes (as I do), then these knives are a great choice. This set is very comprehensive, lacking only a cleaver. Since I started buying Cangshan knives, my Wüsthof knives aren't getting much use. The Cangshan knives outperform all my other knives, and are also a better value. The knives clean easily with soap and water (I never put my cooking knives in the dishwasher). After rinsing I towel dry, then air dry for 10 minutes before popping them back into the storage block. The block included with these knives is beautfully designed, milled, and finished. It provides easy access to every knife. As a bonus, this knife set looks stunning. The design is graceful and modern, yet organic. The set elevates the look of my entire kitchen.   • Comparison of Cangshan N1 with /Wüsthof Classic Knife Sets
While the steel is sourced from Germany, Cangshan manufactures its knives in Yangjiang, China. Despite being made in China, Cangshan has earned recognition for quality craftsmanship. After all, chef Thomas Keller of the famous French Laundry restaurant wouldn’t be its brand ambassador, let alone display his photo on the product box, if the knives were subpar. As of today (2/26/2025), the price of this knife set on Amazon is $ 549.95. The Cangshan N1 Series is a premium design with a unique modern, all-metal aesthetic, which likely raises production costs compared to their more budget-friendly lines. Since the current cost of this item is competitive with the Classic Wüsthof set manufactured in Germany and since I now own both, the balance of the review will be a comparison of the two. Hopefully, I can give the reader some guidance about which knives would better suit their needs. Wüsthof holds its edge slightly longer due to its PEtec factory edge (14° per side vs. Cangshan’s 16°), but both require regular honing to maintain sharpness. Cangshan seems to need sharpening a bit more frequently. Wüsthof is more forgiving of occasional dishwasher use, but both brands strongly recommend hand-washing to preserve edge sharpness. To prevent water spots or potential rust, Cangshan says to dry the knives immediately after washing. I’ve never had a problem with rust or water spots on Wüsthoff no matter how badly I neglected them. Cangshan’s stainless steel handles can be sleek and beautiful, but become somewhat slippery when wet. Wüsthof’s synthetic handles provide superior grip and ergonomic comfort. (To avoid accidents, make sure both your hand and the Cangshan knife handle are completely dry before using! ) If you love the modern, all-metal design and are comfortable with hand-washing and immediately drying, Cangshan N1 is a solid choice. If quality long-term durability, and brand reputation matter most —and the price is nearly the same—Wüsthof Classic might be the better investment. In any case, the N1 Cangshan premium knife set would be both a classy and generous wedding gift to a couple setting up their first kitchen, or a stunning replacement set for the experienced cook. ... show more
