How this arrived This arrived in a heavy duty, official Calphalon non-retail brown cardboard package that listed the brand name, minimal product information, and country of origin. The package measured 16 x 12” x 7½” and weighed in at just over (12½) pounds. What was inside the “non-retail” package Inside the non-retail package was Calphalon’s heavy duty retail version cardboard packaging, which was very descriptive, had the brand name, pictures, product information, and was similar in size to the non-retail version, and weighed-in at about (9¾) pounds – which gives an idea of what Calphalon’s block and knife set weighs in at. What was inside the “retail” package Inside Calphalon’s retail package was, of course, Calphalon’s Premier SharpIN™ 15piece Cutlery Set. Giftable? Yes. The name alone will impress. Bottom line: I am pleased with my selection. This Cutlery and its block are stunning, matches our décor, our cookware, and other Calphalon items on our kitchen counters, for instance, our Calphalon espresso machine. Each utensil is sharp, feels substantial, is comfortable, not only to use, but to hold. The weights of each piece are nicely balanced. Yes, this set does carry a premium price, and it’s made in China, however, high-carbon, no-stain German steel is used, but for the steak knives, which are reported as having been stamped from high-quality Asian steel for all-around superior performance no matter the task. A good Cutlery set, which has the features noted herein, I think enhances our kitchen and others notice too. We received the following pieces: 1. 8-inch Chef's Knife 2. 8-inch Bread Knife 3. 6-inch Utility Knife 4. 5-inch Santoku Knife 5. 3½-inch Paring Knife 6. Kitchen Shears (which surprisingly are sturdy and work well) 7. Steak Knife 8. Steak Knife 9. Steak Knife 10. Steak Knife 11. Steak Knife 12. Steak Knife 13. Steak Knife 14. Steak Knife 15. Sharpening Wood Knife Block The Chef’s Knife and Bread Knife are very nice. My spouse was really attracted to the Steak Knives. Everything was sharp, right out of the box/block and the sharpening features are a novel idea, because that’s the biggest thing we tend not to do, to sharpen regular (helps if you have a good knife set). Nothing is too large nor too small (although I am used to a larger Santoku Knife). All non-cutting edges are smooth and comfortable. Knives have the right amount of sharpness. These are daily driver type cutlery, that is how nice these items are and a testament to their durability. (Plus, the identification is cute on the major knives.) Cutlery, High-Carbon Steel, and Stainless Steel Flatware, technically, would be spoons, forks, and other “serving” utensils used at the table; and would exclude a knife, which is classified as cutlery, although all are commonly included in the definition of Cutlery. Silverware Silverware is any of the above, but the metal is silver (costly and time consuming to clean away tarnish. A cheaper version is silver plated Cutlery. High-Carbon Steel High-Carbon Steel (in this instance, the German version) is version of steel that has a “carbon” content of at least 0.05% (low) up to 2.1% (high) carbon content. Carbon (C), which has the atomic number (6), is that periodic element that gives the knife its hardness. Other additions make steel more corrosion resistant or more durable, however, at the expense of the steel’s hardness. The greater the hardness of the steel, the thinner I can sharpen it, and the sharper a knife can become. Hardness, however, has a trade-off, such as susceptibility to rust and high brittleness. However, good carbon steel creates a balance between a high carbon content and minimal additions such as cobalt, molybdenum or vanadium. I am not sure what the exact carbon content is here. There is just a reference to high-carbon content German steel. Stainless steel Stainless steel started to become popular about (100) years ago. The amount of shine any utensil possesses has nothing to do with whether its Cutlery or silverware. The best material, for stainless steel Cutlery is 18/10. 18/10 stainless steel contains 18% chromium and 10% nickel. Chromium is used in stainless steel to provide durability as well as resistance to rust and corrosion, while nickel is used to give Cutlery its luster. This set makes no reference to having used stainless steel. Forged vs Stamped Cutlery Forged Cutlery is made from a solid bar of steel that undergoes a heating process, to a very high temperature, then cut, pounded into shape, sharpened, and finished. Stamped Cutlery is from a ribbon of steel, then punched or cut out into its shape. Then tempered, sharpened, and finished. Stamped produces less expensive Cutlery. Because of the heating process, forged Cutlery is stronger than stamped Cutlery, which is more flexible. Here, the set is set to have been crafted from “forged” high-carbon steel. Calphalon is a famous name brand, with an impressive heritage, measured over many years; I like name brand products. Why? Because name brand products have high quality standards and stand behind what they sell; that includes Calphalon. So, if there is a defect, I can look to Calphalon to honor their warranty. Further, if I need an additional piece, to add or replace in the family collection, I can look to Calphalon to likely have what I need. Which brings me confidence in any Calphalon product, including this Cutlery set. Although the price seems expensive, it really is not, for a good set, that could last generations (I know, we have Cutlery passed down generation after generation that is over (150) years old, that I still use, cannot beat those needle point tines of old - LoL). Craftsmanship. I see that when artificial (wood) is used, such as pakkawood, for handles, there are “no” gaps and such. However, for real wood handles, the molding to the metal is not always perfect. We have seen this in many instances, even in expensive craftsman made Cutlery products made in the United States, which are at premium prices. The handles here do not appear to be real wood, nor do they appear riveted, rather are as is they are a part of the blade; but seem very durable. I personally do not think that these not having real wood handles are a significant issue. The price is competitive with other branded sets. I would select these again.   • Always sharp, comfortable in hand, steak knives feel a bit cheap

Pros: ~Very sharp knives ~Comfortable ergonomic handles ~Self-sharpening knife block ~Labels on handle for easy identification Cons: ~The knife block is a bit bulky ~Steak knives feel cheaper than other knives The Calphalon Premier SharpIN Knife Set is a very high quality set for all of your food preparation needs. The knives are incredibly sharp, and should stay sharp for a long time. I've been using them for everything from chopping vegetables to slicing meat, and they've performed excellently. The knives are very well made. The prep knife handles are ergonomic and comfortable to hold, and the blades are made of high-quality steel. Unfortunately my one real complaint is that the steak knives feel much cheaper. I wish they made the handles the same as the other prep knives. One of my favorite things about this set is the self sharpening knife block. The block has built in ceramic sharpeners that automatically sharpen the knives with every use. This means that I never have to worry about my knives getting dull. Although this is an excellent feature, I do worry a bit about the longevity of the blades. Most kitchen knives do not need to be sharpened very often so by sharpening the knives every time they are pulled out of the block makes me wonder how long the blades will last with heavy use. Overall, I'm very impressed with the Calphalon Premier SharpIN Knife Set. It's a great value for the price, which is $279 at the time of writing this review, and it's a set that I hope to be using for years to come. ... show more

  • SUPER SHARP!

A much needed upgrade on my kitchen knives! I didn't realize how dull my other set was until I tried these. They are VERY sharp and needs no effort at all using them. I already had a decent set with a built in knife sharpener in the block, but it broke and came out of the block so my husband was having to hand sharpen them once in a while. They are all stainless steel which is fine but my husband was wanting to get some better knives with black handles. The ones that he wanted though are a very expensive German brand set that I wasn't willing to fork out the money for, so I settled for these and we're very pleased! I love everything about them. It's nice that the knives stored in the top part of the block have their own built in sharpener, except for the bread knife. They are labeled on the ends of the knives so you know which one to grab, which I've never seen on knives before. The steak knives are serrated. The knives have a good weight and feel nice in the hand. They look and feel well made. Also included is a pair of kitchen shears with a built in bottle opener. The block is a nice color. This set does blend in with my black speckled countertop which makes it hard to see, but that's okay. They look great! I just have to keep reminding myself that I don't have to press so hard when slicing and chopping so I don't cut my fingers off. Very pleased and highly recommend! ... show more
