The Petty fits in small places that require more dexterity than bigger chefs knives while handling bigger jobs than a Paring knife can take care of. A razor sharp Petty knife can intricately carve and style vegetables and fruits for beautiful presentations and garnishes, performing just as well for bigger jobs such as preparing meals.
  • Proudly made in Japan. This knife is complimented with a traditional Japanese Wa-style handcrafted Octagonal Handle that is lightweight and ergonomically welds to the hand for seamless use. A protective wooden sheath called a Saya is included, which protects the knife and adds to its appearance when not in use. The hammered texture of the blade eliminates friction and keeps food from sticking to the blade.
  • Perfect for both commercial kitchens or at home! Traditional Japanese knife making values a sharp edge, which requires attention and care. Sharpening and honing should be done with only water whetstones. Hand wash and dry only, and do so immediately if working with acidic ingredients. I recently delved into purchasing Yoshihiro cutlery I have a blue steel damascus kiritsuke by them that I love and deceided to purchase a smaller knife for tasks the 9" kiritsuke was a bit cumbersome for. This was the knife I chose. First of all it is a gorgeous knife. The blade has a lustrous shine with gorgeous detail. The handle adds a very nice accent.Out of the box it was shaving sharp and after a dozen or so uses it remained shaving sharp for a stainless blade it has excellent edge retention. The knife is incredibly light and agile. Being a utility knife its handle doesn't grant the proper clearance for your fingers to do any chopping but it is great for slicing, carving, peeling, or doing fancier knife work. It is a bit long for really intricate detail work so if you plan on making delicate food sculptures or garnishes I recommend their paring knife over the petty utility. ... show more

This knife is well made. It feels good and looks good. I have not used it enough to know how durable it is, but I am happy with it so far. It is not scary sharp like some knives that make you concerned even to hold them loosely by the handle, but it does have a good sharp edge. Not my first purchase of Yoshihiro products.. I got my first and favorite knife as a suggestion from a chef who I was learning from, on a trip to Japan about 12 years ago.. I have been working professionally in kitchens for over 27 years and have gotten to use knives of other chefs from around the world.. Each knife maker and knife has a place and can be a personal choice of what feels right for you.. The blade of this knife is exceptional, the quality is evident as soon as you see it.. The blade is light great for hours of heavy use.. Cuts with amazing accuracy.. As a chef who uses my knives daily I only carry 3 knives with me and 2 are Yoshihiro.. One has been used daily for years and is still quality and keeps a razor edge with a little care.. Would recommend for anyone who is looking for a good quality Japanese knife.. ... show more

The knife is lightweight, beautiful and sharp. We are cooking enthusiasts, so we have a large variety of traditional knives from different countries and companies. This knife has Japanese specialities. It sharpened only from one side, on the right side and it is an interesting feature. Was pleasantly surprised by this petty knife. Well made and balanced. Included saya and backing by a US company is a real plus. Knife needed a little edge polishing as the edge grabbed a bit as it cut, right out of the box. There was an included catalog however many descriptions are unreadable as they are superimposed over back ground images that make them unreadable, at least to me. Overall a good value and I’m excited to put this knife thru it’s paces as the cooking frenzy picks up as new year approaches. This is a beautiful knife but I was disappointed how quickly it loses the edge. While it was exceptionally sharp for 2 days, quickly became dull and does not bite into tomatoes anymore. It is very comfortable though.

  • This Nicely-Sized Knife Will See a Lot of Use

This VG-10, 46 Layer Damascus Stainless Steel utility knife caught my attention because I was looking for a smallish Japanese utility knife that's easy enough to care for. Based on its size, I expect my wife will also use this frequently. It took me a long time to convince her that sharp does not equal dangerous, but she still has a strong preference for smaller knives. This knife is easily twice the blade length of a paring knife, but it is light enough and very well balanced. It also came razor sharp out of the box. I haven't owned it long enough to comment on its ability to hold an edge, but it is a 60 on the Rockwell hardness scale, so it should be pretty durable. Maintenance. Mine came with an unfinished Saya (wooden knife cover) and an unfinished octagonal wood handle. Both took nicely to the food grade mineral oil I had on hand. VG-10 steel resists rust and stains, but it's not immune to either if you abuse the material. Do not let anybody leave the knife soaking in water. Get acid off of it an an early opportunity. I'm not sure it needs an oil wipe down every time you put it away, but it absolutely does need to be dry before it it stored. My Amazon purchase came from Yoshihiro's Amazon store. Since they import the knives directly, you can be assured they are the genuine article--something I think is important at this price point. Yoshihiro's customer service is also very responsive to e-mails when you have questions. ... show more
