Perfect - sharp , stay sharp. These knifes were beaten and abused in hellacious dinner services in 300 kitchens, and I still have and use them. Love them , the handle is a little uncomfortable barehanded , wear a glove like you’re supposed to be and it’s fine.

Either these are counterfeit or I had way more expectation from this brand. About 5 months after use the blades show dents and rust on them. My other knives, that cost me a fraction of this, that I've been using for more than 12 years are now sharper and straighter then this set. Unbelievable!
