It’s Wustoff, what more do I need to say? Well balanced, sharp as can be, sharpens well, and cuts through meat and veg like a champ while maintain an edge for a long time. I have the 8” chef’s knife, but I bought this because it just felt easier to handle. It’s my go to for 95% of what I make. I use the larger 8”knife for larder cuts of meat. You can’t go wrong with German steel. If this knife is in your budget range, don’t get any other knife. Also, as with all good knifes, don’t dishwash it. I have a set of knives that includes a huge chef's knife. I love it and use it all the time, however, there are times when I wish it could be smaller. This knife is the answer to my wish. Easy to handle, very sharp and a great addition to my knife collection. All of which are Wusthof.

    • I should have gotten the Ikon.

The only difference between the classic and the classic Ikon is bolster. It gets in the way when sharpening. Wusthof is a solid brand although kind of overpriced if you are paying close to the full list price.
