Quality product, but know what you are buying. This has a very coarse grit and is great for resurrecting severely neglected knives, a job that would take FOREVER to do with a honing steel. But in my opinion, this is a companion to a good steel, not a replacement for it. I start with this product to get the dings out of the blade, then finish up with a steel to get a razor-sharp edge. ... show more

This steel has been a great purchase, both for my home and for a family member as well. This was gifted to a chef in the family and she has been very pleased with it's performance. We especially like the oval shape of the steel, as opposed to the more common cylindrical steels. I am skeptical of how much the steel actually sharpens the blade, but it does keep the knives we have in great shape, greatly increasing their performance between sharpenings. While the steel does degrade over time (the diamond coating wears down), it has been working well for the better part of this year for us, so we are pleased with it, and will repurchase when it finally is worn out. I was trained how to use these in class by a Wusthof representative. I had an older version of this with the black perforations and it lasted years. This one has gone dull after only a year. I also got my mother in law one at the same time and her’s still works well probably because her knives are a softer steel than my Wusthof knives or it gets used less.. not sure… ... show more

  • I Can No Longer Recommend This Sharpener

This is the best diamond sharpener I've seen (I've bought several and just ordered two more, one for my son and one for my workshop.) It's a great way to keep sharp knives sharp. It takes a while to get a dull knife sharp using this sharpener but it can be done. Don't rub the knife across the the sharpener. Keep the knife at approximately 45 degrees to the sharpener and move it lengthways up and down the sharpener (sharpening on the down stroke, or as you pull the knife toward the sharpener handle.) Choose an appropriate sharpening angle. The exact sharpening angle is a matter of personal choice depending on what type of edge you wish to create (the lower the angle, the sharper the knife BUT the more delicate the edge.) If you have difficulty choosing a sharpening angle, it's okay, you'll get the hang of it after a few sharpenings. As you sharpen, you're trying to create small, near microscopic, teeth on the edge of the knife. If you move the knife across the sharpener, tip to handle, this will not happen. WARNING - ALMOST EVERYONE, USED TO USING A DULL KNIFE, WHEN USING A NEWLY SHARPENED, RAISER EDGE KNIFE, WILL CUT THEMSELVES. BE CAREFUL!! Good luck, Rod June, 2014. After using this sharpeners for a couple of years I noticed there was one large spot on one side where the diamond material had come off. It was not normal wear, rather a failure of the bonding agent. I emailed Wusthof about the problem hoping they would replace the sharpener. I was told that things wear out and that I should just buy another one. This did not sit well as a diamond coated sharpener is something you should be able to leave for posterity to enjoy. I emailed them back and bluntly explained that I considered their response inappropriate. They agreed to review the problem if I would send the sharpener to them. I paid the postage and returned it. I never heard from them but within six days a brand new sharpener arrived at my house. Warranty worked, but it took some complaining. Rod Feb. 2015 After six months the same problem has occurred with the replacement sharpener. Their knives seem to be fine but shame on them for marketing such an inferior sharpener. I recommend the use of a diamond sharpener like this, but you need to choose another brand. A good knife, with a properly ground edge can easily be kept razor sharp with very little effort. The only downside is that my wife, after many years of using sharp knives, still manages to cut herself every once and a while. ... show more
