Description

The gyutoh is Japan’s chef’s knife, an all-rounder knife for just about every task in the kitchen. Dice vegetables, slice meat and fish, and chop fruit with this exquisite workhorse of the kitchen.The MIYABI Black 5000MCD series is a true work of art. This series boasts blades of ultra-premium steel for unsurpassed sharpness. Exquisite Japanese craftsmanship merges with expert German engineering for the ultimate kitchen knives. The blades are constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 on the Rockwell hardness scale. This results in an exceptionally sharp and long-lasting edge that is highly corrosion resistant. The authentic, thin, Japanese profile blades are wrapped in 132 additional layers of steel, resulting in a gorgeous flower Damascus pattern. Sharpening is done using the traditional, three-step Honbazuke method.The handle of the Miyabi Black series is made from the prized Bigleaf maple and dyed a black ash color. The grain and color of the black ash contrasts beautifully with the Damascus pattern of the blade. The handle is crafted in a traditional "D" shape, with a rounded spine and heel, providing optimal ergonomics for fatigue-free cutting. Handcrafted in Seki, Japan.

  • Sharp knife, but very poor QC
When I received the knife (labeled as knife #2 in the photos), it looked used. The box was torn at a corner, but that wasn't a huge deal breaker for me. The deal breaker is how the knife came with an obvious scratch. I understand that it'll eventually develop scratches over time, but however, I spent a premium price ($400) for this knife, so I do expect it to come with no scratches. Due to the issue above, I decided to order another one in hopes that it doesn't come with scratches. When I received the replacement (labeled as knife #1 in the photos), it had its whole new different issue. It came bent, which is very disappointing... I don't even know how these knives are passing QC. Both knife #1 and knife #2 will be returned. Overall, the knife is quite sharp, and I really like its design over the Birchwood version. Therefore, I will make an attempt for a 3rd (and last) replacement. If it arrives with defects again, I will be updating this review to 1 star (currently at 3 stars) and then return the 3rd knife. UPDATE: I decided to not test my luck with a 3rd replacement. I did more research and ended up purchasing the "Kobayashi SG2 Gyuto 240mm" from another website.   • Pretty great knife
This knife is pretty great. I’ve been a pastry chef for many years, yet I do cook a lot of savory food at home. I appreciate a well made knife. It’s not always easy for me to find one I can use because I’m left handed, and the knife making world as a whole seems to forget that left handed people exist. My only complaint about this knife is that it doesn’t cut as smoothly as I’d like, possibly from the double edge (which allows both a right and left handed user to use it). The knife is easy to hold, use and feels great in your hands. If you’re bothered by an expensive knife having words and serial numbers on the blade, then I suggest you find another one.   • Razor sharp, but heavy for a Japanese knife...
I spend about 50 to 55 hours a week with a knife in my hand and this is the third Miyabi knife I’ve purchased. Used to use a Wusthof Ikon 8” chef knife, but switched to a Miyabi artisan about a year ago. As far as this knife goes, Its sharp as hell, seems very sturdy, but the blade is fairly shallow compared to the two knives previously mentioned, leaving little room for knuckle clearance. This knife is quite a bit heavier than the artisan, the balance point is heavy towards the handle as well...I guess we’ll just have to see how it does in the kitchen tomorrow..maybe I’ll post an update in a week as to weather it becomes my go-to or if the clearance and balance on the artisan keeps me coming back. ... show more

  • Amazing knife needs blade edge work
Made of the hardest steal used for knifes Retains edge forever The feel and look is amazing My only complaint is that the edge sucked, so take it to a professional to have the edge properly set and get yourself a high grit ceramic sharpening stone to hone it with

  • Balance and beauty
This is one of the best knives I have ever used. The edge is so sheer you hardly have to touch the edible. Not only does it look beautiful but it feels good in hand. The balance is near perfect.

  • Is it a fake?
I am not sure how to determine if the knife is a fake of factory second. There is a blemish on the back of the knife's blade near the handle where it looks like it was welded together and tried to polish out. I paid a lot of money for this knife to have any blemishes.
