    • This is the droid I was looking for...
A while back, I got a pasta machine (not this one) for my kitchen aide mixer. That one was garbage, it was always clogging, cleaning was a pain, and it was poorly made. (this was a gift). So... I bought this one, and I'm super glad that I did! This pasta maker works REALLY well. I mean, it feels like cheating. When combined with a good recipe (and a little practice figuring out which number goes best for which type of pasta) you'll never go back to store bought again. Seriously. It's too easy, and the quality is so much better. What you won't find, is "What number for which pasta?". That's trial and error. I've found that #2 with the wide cutter makes great "noodles"... while #3 with the same cutter is perfect fetucinni. While I'm hear, I'll share my 84 year old Nonna's pasta dough recipe: Use Caputo Semola (fine ground) flour, plus King Arthur "00" pizza dough flour. Mix them at a ratio of 3 semola to 1 pizza flour. (pure semola works, but thinning it with pizza flour makes it last longer, and pasta is a little more tender). I make up a big batch of this flour with this ratio... then... 100g mixed flour per "large" egg. A pinch of salt, and a tiny bit of water to get the consistency just right. (maybe 10ml). Don't over-knead... go until the dough is smooth. I do all my rolling/cutting at speed #3 on the kitchen aide. Faster feels a little like Lucy and the Chocolate Factory, and slower just takes too long. ;) I like to roll/fold 4 times on #8 (fold it in at 90 degrees to turn the blob into a square... this gets you a consistently wide sheet.. but leave about 1/4 inch at the edges), then once on #6, then once on #4, then two passes at the last size (#2 or #3). I'm a little OCD, so I trim my noodles to the same length. Comes out PERFECT. (For ideas, see Vicenzo's Plate on youTube) The only negative about this machine, is the numbers are really hard to read. They're barely etched on the dial... but that's easily fixable with a sharpie/labels/engraver. ... show more

    • Great product, very poor instructions
The pasta maker is much easier to use than a manual pasta maker. I just got mine and made my first batch. It took maybe 1/3 of the time it used to take on my manual pasta maker. The instruction booklet is very poorly written, though, so you will need to look up online how to actually make pasta with the attachment if you've never made pasta before. The thickness settings are the inverse order of most other pasta makers (including the regular KitchenAid-brand pasta attachments) which would be confusing if you were following a typical pasta recipe. The largest thickness on this attachment is "8" and the numbers decrease to make smaller thicknesses. The smallest thickness on most other pasta makers is "0" or "1," and the numbers increase as the thickness decreases. So this attachment's numbering system is intuitively better, but it won't match recipes. After doing some cross-checking, the roller size for spaghetti or linguine (about 1.8 mm) using this attachment would be #7, while other attachments would call for a #4. Also the thickest setting of this attachment (#8) is quite a bit thinner than the "0" or "1" setting on other machines. This is the setting you need to use when you first put the dough in to roll it flat. It doesn't really matter that it's thinner, though, since the mixer is pressing the dough for you (it would be very hard to hand-crank dough this thin on a manual machine for the first pass). It does mean that you have to send the dough through the at #8 setting many times to get it to be smooth before you change to a thinner setting (be sure to add a lot of flour to your dough as you do this) The unit itself is very sturdy and well designed. It cleans up very easily too. It's wonderful that it's an all-in-one attachment, in contrast to the Kitchen-Aid which has separate rollers/cutters. We wanted to make pasta using our KitchenAid mixer, but sure didn't want to pay for the brand name attachment. Tried this one and we were pleasantly surprised. Worked perfectly! We had a blast rolling out the sheets of pasta. It's labor intensive but this really helped.

Used with Italian 00 flour to make fettuccine and fresh spinach lasagna noodles. Thinned and cut noodles very well. Clean up is easy. Just need a place to store it as it's not an everyday kitchen tool.
