Great curved boning knife for a great price; as a background I am not a professional chef but your average home knife user. Comparison is some victorinox and wusthof knives that occupy my knife collection. Would tend to think they are similar to well reviewed victorinox stamped knives in my opinion - which I think is high praise. Well under any other bona fide knife company’s similar knives, but with similar sharpness and durability. Is it a hundred+ dollar knife, probably not, but we’ll worth the price, durable, comfortable and easily sharpened. Dishwasher safe, though I personally don’t do this. Handle is solid and ergonomic. As far as the steel, (based on some web research), X30Cr13 is a martensitic grade of 420 stainless…magnetic, hardenable with rust resistant properties…characterized by having a 0.26-0.35 carbon, and 12-14% chromium content…mix of analysis gives X30Cr13 an outstanding corrosion resistance and exceptional wear properties. This knife is really good. It feels well in the hand and has a good balance. Careful - blade is very sharp!! But that's a good thing! I use this mostly to filet chicken cutlets and it slices through them with ease. This is a non-serrated blade and is excellent at cutting through meat. Hand wash for longevity. This is the first boning knife I own. I needed something to butcher a deer after my hunt. I chose this knife because it was much cheaper than some other options, so I was not expecting too high of a quality. I will say that the knife performed very well and was sharp out of the box. The handle felt nice and never got slippery. I did have to use a sharpening steel once or twice during the process, but in all I would rate this knife as a keeper.
