Mauviel, the renowned copper cookware manufacturer in France, presents M'steel. M'steel is a collection of frying pans and crepe pans made of extra thick Black Steel with riveted steel handles. The Black Steel, carbon steel, is an excellent heat conductor and extremely durable. The steel withstands high temperatures allowing for longer preheating and thus excellent searing. M'steel is designed to work on all cooktops including induction and metal utensils are safe to use. Prior to first use, clean the pan with very hot water to remove the beeswax from the entire pan. The beeswax is used to prevent the pan from rusting and to save time when seasoning. If at first use, you notice any wax residue, use a paper towel to wipe your hot pan clean. for seasoning, cover the bottom of the pan with flavorless oil and heat for 5 minutes. Let the pan cool before draining the oil, and then wipe clean with paper towels. Repeat the process a second time and your pan is ready for use. After this process, the pan will acquire a natural nonstick property. After cooking, wash the pan in hot water, wipe with a soft sponge and dry thoroughly. Do not use dish soap and do not remove the black layer that forms at the bottom of the pan, it will make a solid film and create a non-stick surface.   • Well made, heavy, beeswax is a big problem

The Mauviel M'steel Crepe Pan is well made and surprisingly heavy for its size. The steel is thicker than I expected. The instructions for removing the beeswax rust prevention coating are useless. Beeswax melts at about 145F, so the hottest water from a residential water heater will not remove the wax even with detergent added. Scraping the wax off left scratches on the pan and could not remove all of the wax. Acetone dissolved the surface of the wax, so repeated applications may remove it, but a thin coating of wax tends to get left behind and areas where the wax is thick are still very difficult to remove. My final attempt involved placing the pan in a gas grill and heating it to between 500F-600F to burn off the wax. This worked quite well but it took much more time time than I expected. In this process the wax first melts, then turns black, then thickens ito a black semi-liquid, then dries and eventually begins to flake and release from the pan. If left at this temperature long enough.the wax will eventually disappear. I have not yet cooked with pan due to the time it’s taken to remove the beeswax. I plan to put several seasoning layers on the pan before I begin using it for cooking. ... show more

  • Great pan, but came slightly damaged

This is a great pan! I have an 11 inch de Buyer Mineral B frying pan that I love. I wanted an omelette pan and decided to give this pan a try. The beeswax coating is a lot thicker on this pan than on the de Buyer pan. However, it’s not hard to remove. I first set the pan in a plastic dish pan and poured a tea kettle full of boiling water over the inside and let it soak for about two or three minutes. Poured off that water and poured another tea kettle of boiling water over the pan. I took a small, flat nylon pan scraper (Lodge sells them -$5.00 for two) and scraped the wax off the inside and then the outside. One more kettle of boiling water and few more scrapes with the scraper and it was free of wax. Washed and dried it and began seasoning it. This is when I noticed that the pan was slightly damaged. It appears that the pan was dropped, as the it has a deep nick on the outside front of the rim and side of the pan is slightly bent so that it’s no longer round. The beeswax coating was so thick on the pan that I didn’t notice the nick or the bend when I was scraping it. Since I’d removed the beeswax, it was too late to send back. The bottom of the pan is still round and the damage didn’t affect the integrity of the pan, so I’m not too terribly upset just a little disappointed. Over all, this pan was much easier to season than my de Buyer pan.. I will say, after I washed it I set it on the counter and went to get a towel to dry it and came back and it had already started rusting, so be sure to dry it immediately after initial scraping and washing. I followed the manufacturer’s instructions for seasoning , just because I wanted to see if it worked better than my normal method. It worked pretty well. The pan heats fast and evenly.   • Perfect omelette pan, but read these instructions for cleaning off the wax and seasoning!
Size: 8 Inch
Read the following instructions on cleaning off the beeswax finish. If you do so, you will love this pan. If you do not, and try to clean off the wax by washing it in the sink, you will hate this pan. The pan comes with a protective beeswax finish that must be removed before the pan is seasoned, and used. It literally takes 30 seconds to do it properly, or 10 hours if you do it wrong. Simply heat a kettle of water to boiling, and pour it over the pan. Wipe out any residue and repeat, if necessary. Voila. Beeswax gone. If you are concerned about the beeswax going down your sink, then do this outside, away from any landscaping you care about, that would be harmed by the hot water. If you try to clean off the wax in the sink with soapy water, you will still be doing it 8 days from now. Don't reinvent the wheel. Only heat will melt wax, whether it's beeswax or any other kind of wax. The next step, seasoning the pan. The instructions are here on the Mauviel website: http://www.mauvielusa.com/M-steel-Crepes-Pan-Steel-Handle-8--plu3653.20.html. In a nutshell, cover the bottom of the pan with oil that does not have a strong flavor, heat for 5 minutes over medium heat. Turn off the heat, move off the burner, and let the pan cool. Pour off the oil, wipe clean with paper towels, and repeat the process a 2nd time. The pan is now seasoned and ready to use. After that, treat this carbon steel pan as you would cast iron. Do NOT clean it with soap and water, and do NOT heat shock the pan. Rinse it off with hot water after use, scrubbing it with a brush or dishrag as needed, with NO SOAP, dry thoroughly right away, and the pan will perform beautifully. It will develop a non toxic non stick finish without any chemicals. I read another review that this small pan would not sit correctly on the counter or stove because the handle is too long. That has not been my experience. My pan is perfectly balanced, and will sit flat and not tip over, even empty. This sized pan is absolutely perfect for making individual omelettes. They finish rapidly, so you can crank out omelettes for everyone on a weekend morning. Enjoy! Update: I've now used this pan to make omelettes about 10 times. Mauve crepe pan, where have you been all my life. This is better nonstick than any of the chemical nonstick pans I've ever used, and all without the chemicals. It's absurdly easy to keep clean (it just wipes clean with the merest spray of water.) I never could get an omelette to turn out right, and now I'm turning out perfect French and American style omelettes. (The difference is the French omelette is stirred and shaken continuously for a curd consistency with no browning, while the American version is more browned.) ... show more
