  • Made in france. Mauviel is the leading cookware manufacturer for professional and household chefs throughout the world.
  • Excellent conduction. Made of extra thick black steel /carbon steel with iron handles. Black carbon is a good conductor of heat: it rises in temperature very quickly. It is an ideal material for searing, browning and grilling
  • High performance. Commercial grade durability allows longer preheating and excellent searing capabilities. Rivets made of stainless steel 18/10
  • Natural non-stick. Before first use, season the pan per manufacture recommendations. The pan will build up a natural nonstick property and darken overtime.
  • Beewax coating. It is used to prevent the pan from rusting and to save time when seasoning. Prior to first use, clean the pan with very hot water to remove it from the pan. If at first use there is any wax residue, use paper towel to wipe your hot pan. Seasoning: cover the bottom of the pan with flavorless oil and heat for 5 mins. Let the pan cool before draining the oil, and wipe it to clean with paper towels. Repeat this process a second time and your pan is ready for use. After this process, the pan will acquire a natural nonstick property
  • Hand wash only. Not dishwasher safe. Do not use metal utensils on the non-stick cooking surface. The use of scouring pads, steel wool, abrasive cleansers, bleach and/or oven cleaners is not recommended and can scratch or damage your cookware. Misuse of your cookware will void your warranty.
  • Usage & Care: Hand wash - with hot water immediately after use & then wipe immediately with paper towel, store in dry place. Do not remove the layer that gradually forms on the bottom of your pan. This layer is not dirt, it will make a solid, non-stick film. Before storing your utensil, grease it with a little olive oil to prevent rust. After this preparation, your utensil will be faithful to you for many years.
  • Maximum temperature. Heat up your pan slowly. Our products have a superb conductivity, so cooktop knobs or controls cannot be used at their 100% heating power; they need to be used at a 60% capacity. It means on a level of 10, 6. Do not use high heat for a long period of time. Do not leave empty pan on a heated burner for an extended period of time. Oven safe up to 680 F

  • Perfect!
Size: 8 Inch
Received my crepe pan yesterday. I had previously watched Mauviel’s YouTube video detailing how to remove the protective wax coating in the oven. I followed the instructions, except that I kept it in the oven for one hour at 300 degrees instead of 30 minutes. I placed it on a baking sheet lined with a silicone mat and topped with a sheet of parchment paper. When I removed it from the oven (still very hot), there was a large puddle of wax. Yay! Most of it was removed! I rinsed it under very hot water, and the remaining small amount of wax was gone. I did have to scrub a little around the rivets, though. I followed the seasoning instructions (I used grapeseed oil). I finished up with a light coating of Crisbee rub and heated the pan on medium high heat for about 10 minutes. This morning, I performed the dreaded fried egg test, and the pan passed with flying colors! No sticking. I melted a small amount of butter in the pan before adding the egg. The sweet spot temperature setting on my crummy electric coil stove was 3.5. I then fried a second egg to make sure that it would still be non-stick. It was! Happy Dance! I purchased this small crepe pan because my larger de Buyer crepe pan is too large and heavy for me to swirl the batter in the pan. Plus, I also think that the crepes are too big. For me, this Mauviel pan is the “Goldilocks” size, lol. Anyway, this is a wonderful pan that will in all probability last for the rest of not only my life, but my son’s as well. Just buy it! You won’t regret it as long as you follow Mauviel’s instructions for removing the protective wax. ... show more

  • Perfect omelette pan, but read these instructions for cleaning off the wax and seasoning!
Size: 8 Inch
Read the following instructions on cleaning off the beeswax finish. If you do so, you will love this pan. If you do not, and try to clean off the wax by washing it in the sink, you will hate this pan. The pan comes with a protective beeswax finish that must be removed before the pan is seasoned, and used. It literally takes 30 seconds to do it properly, or 10 hours if you do it wrong. Simply heat a kettle of water to boiling, and pour it over the pan. Wipe out any residue and repeat, if necessary. Voila. Beeswax gone. If you are concerned about the beeswax going down your sink, then do this outside, away from any landscaping you care about, that would be harmed by the hot water. If you try to clean off the wax in the sink with soapy water, you will still be doing it 8 days from now. Don't reinvent the wheel. Only heat will melt wax, whether it's beeswax or any other kind of wax. The next step, seasoning the pan. The instructions are here on the Mauviel website: http://www.mauvielusa.com/M-steel-Crepes-Pan-Steel-Handle-8--plu3653.20.html. In a nutshell, cover the bottom of the pan with oil that does not have a strong flavor, heat for 5 minutes over medium heat. Turn off the heat, move off the burner, and let the pan cool. Pour off the oil, wipe clean with paper towels, and repeat the process a 2nd time. The pan is now seasoned and ready to use. After that, treat this carbon steel pan as you would cast iron. Do NOT clean it with soap and water, and do NOT heat shock the pan. Rinse it off with hot water after use, scrubbing it with a brush or dishrag as needed, with NO SOAP, dry thoroughly right away, and the pan will perform beautifully. It will develop a non toxic non stick finish without any chemicals. I read another review that this small pan would not sit correctly on the counter or stove because the handle is too long. That has not been my experience. My pan is perfectly balanced, and will sit flat and not tip over, even empty. This sized pan is absolutely perfect for making individual omelettes. They finish rapidly, so you can crank out omelettes for everyone on a weekend morning. Enjoy! Update: I've now used this pan to make omelettes about 10 times. Mauve crepe pan, where have you been all my life. This is better nonstick than any of the chemical nonstick pans I've ever used, and all without the chemicals. It's absurdly easy to keep clean (it just wipes clean with the merest spray of water.) I never could get an omelette to turn out right, and now I'm turning out perfect French and American style omelettes. (The difference is the French omelette is stirred and shaken continuously for a curd consistency with no browning, while the American version is more browned.) ... show more

  • If you like cooking with cast iron, you will most likely love this pan.
Size: 8 Inch
Yeah, as others have noted, this was not particularly fun to season. If you screw it up, like I did, boiling some vinegar in the pan will greatly hasten removing the bad seasoning. I found that it was much easier to season the 9.5" pan than the 8". I have no idea why, but the way the 9.5" inch pan heated more slowly and evenly on my electric stove may have had something to do with it. Once I got it seasoned, I fell in love with it. It's just a super nice pan. Crepes cooked very evenly on it. None stuck. Maintained temp pretty well on my really weird, terrible stove (which has since gone to where horrible stoves go when they die). Have not used it on my new stove yet, but I expect even better results with more consistent temps from the stove. I am a huge fan of cast iron cookware, and this is a fairly natural extension of that concept, only lighter. If you like/love cast iron, you will really enjoy this pan. I bought this to use exclusively for crepes, at the time, but can see myself using it for other things as well. I see more such pans in my future, and I would definitely recommend this one. Love that it works on induction as well. Inexpensive. Quality. What more could you want? ... show more
