  • This is a great pan, not made in China
This is a sturdy quality made pan that isn't made in China. It's my first Carbon Steel pan (other than a nice collection of cast iron we have). I bought it as an alternative to a "non-stick" pan to avoid the PFA's (or any of the other chemicals used in non stick cookware). We had a great non stick Calphalon pan, but it warped after 15 years, so we replaced it with this. We're not disappointed, this is a great non stick alternative. If you're not used to cooking with cast iron or stainless steel, you'll have a learning curve, but as long as you season this properly and take care of it, it will serve you well. I was cooking eggs over easy after a few uses and nothing is sticking. We seasoned with bacon twice and a few other fatty items, after 4/5 good fatty meals in it, it's smooth and working great. It's been a month. The pan seems to be very well constructed, it functions perfectly, I hope this will be an "heirloom" style pan that will last forever, we really really like it. ... show more

  • Good factory seasoning, no warping on coils.
I don’t leave many Amazon reviews but I feel this pan deserves some love. I’ve had it for about a month. I used to cook most things on a cast iron so I’m familiar with the maintenance. I now cook most things on this pan including my very runny pan fried eggs. The factory seasoning is great and this pan heats up 2x faster than my cast iron. The handle stays cool and is comfortable. I don’t have any issues with warping on my electric coils (take that for whatever it’s worth). Usually I just wipe out the pan with a paper towel and it’s ready to cook with next time. When I do cook something that sticks (like warming up pre-cooked beans sometimes the bean skin sticks) I usually just scrape it off but if I do need to “wash” the pan I just use some warm water and a light scrub and then buff it with some oil. It stays cleaner than my cast iron for sure. I love this pan. ... show more

  • Like a lot but...
Did not realize you could not wash it in the sink with other items. Instructions say not to use soap unless you plan to reseason it. You are to wipe it out after use and use oil with course salt as a scrub if needed to remove stuck on debris. I was careful the first 2 times I used it to not cook anything that might stick, and used oil. Third time bits of chicken did stick and I used the oil/salt but cannot get the pan 100% clean. Did not realize it was going to be that much of an effort to clean. It does heat evenly, handle is comfortable, fairly heavy as expected. Excellent quality.   • Amazing First Impression
This is my first time cooking with carbon steel and I am blown away by how much more I like this than our regular cast irons. This pan is light (compared to regular cast irons and even larger steel pans) and ergonomic for me, even though I have weak wrists. I ignored the advice to not start with delicate foods like eggs because I really wanted eggs lol. I started the pan on a 4 on my electric cooktop and let it warm up before adding a little oil and turned up to 5, fried an egg and-- it stuck quite a bit. I got most of it out, egg yolk broke a bit. I let the pan continue to sit on the burner and noticed the color change of some seasoning already. Once it cooled down I was able to just wipe away the mess with zero water or washing. I tried two more fried eggs and by the third one no sticking at all! The very next thing I made was this omelette and I am so incredibly happy with this pan. The only thing I don't love is that the only lid available is a silicone one. It's ugly for one, the pigments probably have cadmium and I'm not a fan of heating up silicone anyway. I looked for a lid from somewhere else but there must be a reason there aren't lids for this material pan because I couldn't find one anywhere. ... show more

  • Total stick NOT nonstick
Used once to cook eggs. Eggs immediately adhered to surface and removal required 30 minutes of scrubbing with grapeseed oil and coarse salt followed by boiling water and wooden spoon to remove residual egg. After the above ordeal, you could see where their '"seasoning" process had come off in places. $100+ into the trash upon first use. ... show more

Great Carbon Steel Pan. Best if you know how to properly season, use, and take care of carbon steel - definitely not the same as a Stainless or Non-stick so do your research and choose wisely.   • Our new go-to frying pan
We've tried all major brands of non-stick (by non-stick, we mean every derivate of non-PFOA/PTFE) frying pans out there over the last 3 years, and this one actually works. Cast iron pans have been around since the Middle Ages, and really all you need is to season the pan (the box comes with simple instructions) and make sure the pan is really hot before frying/cooking on it. Your food will not stick, including over easy eggs. Make sure you heat the pan over the stove after washing so it doesn't rust. But even if it does rust (which happens on occasion just because life happens), just scrub off the rust and re-season. ... show more
