Perfect for smoking... I soaked mine in water the morning I started, 1 hour before smoking. I used a medium bowl and only soaked about 12 logs at a time. And keep replacing logs in water add soaked logs about every 30-35 minutes or to desired smoke flavor. Less often if you you desire less smoke flavor in the meat.

We order this wood for our Ooni on a regular basis the wood is constantly great. However I’m giving them a 5 star for their customer service. We recently received a batch of wood that produced too much smoke while in the Ooni, likely due to moisture. We let them know about this and they sent us a replacement batch hassle free. I used this for the wood burning attachment for a Gozney pizza oven. It burns well with little residue. You do have to cut some pieces down as there are a lot of larger chunks but they do split nicely.

Nice clean pieces of hardwood, suitable for cooking on. The small pieces are uniformly cut and burn fairly quickly, leaving a nice bed of coals to cook on, great for pizza ovens.
