Best pairing knife I have purchased, my go too brand before was Chicago. Global is def more pricey, however its been well worth the price. Its not light, which is good, it has weight to it which helps with cutting. Its easy to grip with all the little holes, it does get a little slippery if your hands are wet since its metal however thats easy to work around, just keep your hands dry. Sometimes they come with a bit of build up from the blades creation or something and feels sharper after first being honed on a ceramic pole I have noticed after owning this knife twice. It's a nice paring knife somewhat reasonably priced for a Japanese knife of it's class, although I have found an even less expensive Ginsu shoku knife to be my favorite smaller jobs, there is nothing wrong with this one ... show more

global knives tend to be a higher rockwell and are prone to chipping, but they are great overall. This cuts like a laser overall. The handle is quite thin so anyone considering that aspect should take it into account. My wife loves the handle profile, but it is not may favorite. As is most globals, i love the cutting edge, and could do with a better handle. With any steel that is harder, chipping becomes a possibility. Given the thin nature of this blade it is more of a concern, and I've had to repair a couple of issues due to mishandling by family members. Harder diamonds are needed to reprofile the edges, or you could just have someone else do it if you are without the tools, or experience. Overall, the price point is really attractive for global knives including this one. ... show more

I like the slender handle, which I hold with my fingers, not in a "fist". This is not the knife for jobs that require power -- you will want a knife with a thicker, rounder handle for those jobs. This is a knife for jobs that require finesse. It is perfect for hulling strawberries, or similar fine work. I've had other Global knives, and I enjoy the extremely sharp (and narrow) edge and how long they remain sharp. OMG! So sharp out of the box. Its pretty simple to keep that way too. I bought this as basic replacement for a steak knife after I caught my wife grinding my prized Kai Shun down on a crappy plastic cutting board. Now its the only knife in the kitchen she wants to use (plus she stays away from the Shun)! I find myself using it more and more as well. Its really light yet well balanced and its always scalpel sharp. I know this sounds like a no - no but I run it through the DW all the time and its still perfect. I'm so impressed I might buy a Global Chef's knife just to see if my Shun is really as good as I think it is. lol You really can't go wrong with this one. ... show more
