I am pretty attached to my chef knife for chopping dicing and mincing foods in my kitchen, but I am always open to trying new ways to keep food prep less fatiguing and fun. When I had researched using a rocker knife instead of a chef knife for thee tasks, I was intrigued enough to give it a try. What I found out upon actually using it was that it is indeed ideal for these jobs with a few advantages over my chef knife.
Unlike a traditional chef knife, this knife’s blade has a pronounced curve that is designed for rocking back and forth over the cutting board. That means you can mince, dice and chop without having to lift your blade off it’s cutting surface in the way that you would while using a chef’s knife. The blade has the perfect amount of length (7”) weight and sharpness to it, and it gave me amazing control and precision cuts. I could prep a higher volume of food efficiently, in less time and with less fatigue. The rocker knife blade is also much wider than a traditional chef knife which made transferring food from the prep area to the pot, pan or bowl quicker and easier. The knife is designed with a full tang, triple riveted handle, and a blade that is hand finished in the Honbazuke 3 step method. This means that the blade is first coarsely ground using a vertically rotating sharpening stone, followed by a fine honing using a horizontally rotating sharpening stone. The edge is then polished using a leather stropping block for scalpel-like sharpness. As with every knife in their Shogun series, the exceptional craftsmanship and attention to detail makes for a knife that anyone would be proud to own and use in their kitchen.

At first I did not know how to properly hold the knife and it felt awkward in my hand, then I looked at the instructions in the little booklet provided. Perfect ergonomically! I cook a lot of ethnic foods that always contain lots of cilantro and parsley. It always takes forever to chop chop chop the greens. This knife is so effortless because you do not have to lift it. You merely put the herbs in a long tube shape perpendicular to the knife. Hold it correctly! Your thumb should be on the blade. Let the weight of the knife do the work. You just put your other hand on the tip and quickly but gently rock back and forth making your way down the 'tube' of greens. It cuts them so finely! MUCH faster than a food processor and you won't bruise your herbs. Takes more time to clean a food processor than to chop all of the herbs. Fantastic on onions and garlic. I was able to quickly chop the onions so fine that I did not need to grate them as many recipes call for. I am always worried that I will scrape my knuckles with a grater. It is packaged so beautifully and the sheath is EXTREMELY safe! It is a delight to be a sous chef with this knife! Sharp as can be and gorgeous too! This is my second Dalstrong knife. I also bought the slicing knife. See my review. The only con is that now my other knives seem dull and weirdly! This knife comes in a beautiful box and the presentation would make a very impressive gift.

Why should you buy this knife? The short answer is that you should get it because its an awesome knife, the long answer is... well, the rest of this review. The shape of a rocker is just fantastic, it makes chopping any smaller things, like herbs (who would have guessed, right?) garlic, ginger, leafy greens, scallions, even larger things like onions are WAY faster to cut small (or not so small if you just rock the blade through the food without going crazy). If you're wondering if this rocker is really much faster than a chefs knife or santoku, let me assure you, it really is a lot faster, and its much more comfortable in the hand and on the wrist. Now, why Dalstrong instead of something else? Well, you wont find a better knife for anywhere near this price, fit and finish is always beautiful from Dalstrong. Take care of it by not pulling it through a carbide V sharpener, not letting it sit around wet all day, don't store it with a bunch of other utensils without putting it in its sheath, and this knife will last you forever and it will always stay beautiful. I'm happy to answer any questions you have as best as I can.

I really love the shape & design of this knife. It does serve the purpose of cutting or chopping herbs by using a rocking motion, but I like the fact that since the blade is tall that I can use a chopping motion to prep veges. The knife is rock solid, sharp, & does exactly what it was designed for. The size & shape of the blade is impressive but I would like to see this done in the Shogun Series X with the hammered finish. I'm not trying to be picky, I just like the finished look of the X series. If it was possible, I'd probably would have all the Dalstrong knives done in the X series pattern & wouldn't hesitate to spend the extra coins on them. I'm not taking away from the Shogun series with this knife because this knife definitely serves my particular needs. I can honestly say that I will continue to expand my collection of Dalstrong knives because they have proven their reliability & have earned a spot in my kitchen.

Razor sharp and perfectly straight. Well balanced in your hand and high quality packaging is just a small example of the extraordinary craftsmanship taken in the creation of this series and the Quantum 1 Series. I do like the leather sheath in the quantum series better. Both series are truly a work of art and workhorses.

This knife great. It’s got a little more curve than I would like but it’s still nice and makes cutting small things easy. But, it also has enough weight to cut bigger things. Feels great in my hand. Best knife i have right now. Comes with a sleeve for it that is perfect to keep it safe and clean.
