We buy out meat in bulk. This requires us to defrost large roasts, large packages of ground beef, and chicken. It takes too long to wait until it is all defrosted. We bought this knife in the hopes that we will be able to partially defrost the packages and the cut them up in smaller parts. The knife needed to be large, heavy, sharp, and easy to handle. This knife is a wonderful purchase. It comes in a beautiful box designed to store it, but also with a plastic, well made sheath to cover the blade. I didn’t keep the fancy box. The sheath does the job of protecting the knife just perfectly. It’s a balanced, very well crafted addition to my kitchen.

This knife is not the one I was originally looking to buy. This knife saves me a lot of money it is sharp is did the job of breaking and cutting full prime new your cuts den into steaks and the heavy meat cutting required to cut your own steaks. Handle is very comfortable and blade is sturdy and very sharpe. I like the bull nose as well. When I was young I worked in a steak house and cut many steaks in the process of my job this knife is as good as the knives I used then

I have always wanted one of these knives and so glad I finally got one. Used it for the first time today. Razor sharp--first for slicing Italian loaf. Two swipes cut each slice like I was cutting thru butter. Also used today for our Labor Day BBQ briskets. Precision cuts. Absolutely perfect purchase. I totally recommend cleaning immediately after using and returning it to the sheath for safety reasons. The sheath is very sturdy also.

We have several Cutluxe knives in our kitchen. My wife does more of the cooking prep than I do, and has pretty "experienced" knife skills. While there might be some conventional wisdom that females prefer a smaller, lighter knife handle and blade, I rethink that is grossly overblown, and probably sexist. When we first got a Cutluxe paring knife (and we have at least five paring knives of various sizes, ages and quality) I found my wife immediately gravitated to the Cutluxe paring knife. She commented on the heft of the handle and the level of security she felt using it. I like it too. Great build. So when we were looking for a brisket slicer, there was no question we would buy this 12" carver. Great knife, happy kitchen staff! We have also bought a Cutluxe utility knife that is almost as popular now as our favorite chef's knife. We also just got the cheese knife to sample and review. We think these knives are well priced and solid quality for any home cook. Highly recommended.
