With a Rockwell Hardness Rating of 58 ±2, this steel takes an extremely sharp edge and has a superior edge retention, which means it stays sharp longer. To ensure optimal sharpness and precision, each blade is hand-sharpened to a 16-degree angle on both sides. These knives feature a well-balanced design. The HELENA Series is known for its round, tapered handle for a comfortable grip. Our semi-bolster design provides a lightweight feel for chopping, slicing, and dicing while still maintaining its strength. Each blade goes through a comprehensive six-stage heat treatment process that ensures each blade's strength and functionality. BE CAREFUL - Everything about these knives feels the way you’d hope they would and you’re not going to want to put them down. The only danger in this is that they are insanely sharp and you can very easily slice your finger if you’re not really paying attention to what you’re doing. We’ve been using them for several months now and don’t have a single complaint about the knives themselves. The chopping block is beautiful but we are noticing a little wear on some of the holes where you slide the knives in - which is to be expected. These knives are fabulous. The handle has honed finish that's beautiful and comfortable to grip; and curved edge at base, so you can rest your pinky against it, for firmer grip. Love the quality looks, design, and specially the sharpness durability of these knifes. The set selection cover most applications that you would need in a kitchen from filetting to chopping, etc. Basically anything you need there a knife for you to use. Warning: these knifes come extremely sharp out of the bag, so be very careful when handling. The sharpness will retain for a long time before needing any re-sharping. Even with daily used my knifes are still very sharp since bought (6 months by now if I'm not mistaken). The only negative (very subjective) is the wood block color...too dark for my taste. The knifes have a white pearl handle and the very dark color of the wood, specially in my kitchen which is all a mixture of white and cream color combinations makes a contrast that is not to my liking. Cangshan should offer a light wood color choice. I had to sand and bleach the wood block to lighten it as much as possible. These are stout, sharp knives. The walnut rack is heavy and well made. The knives feel good in the hand. Not cheap metal like big box store sets. The only thing I won't use is the sharpening rod. What's the point? Nobody uses them because they are not ideal. If you're waiting to make up your mind...just do it. Well worth the money ... show more

These knives are everything you could ask for at this price point. The knives are sharp (and have remained sharp for the year that I have had them). They are durable. I use them daily and there are no visible evidence of their daily use. They are incredibly comfortable in the hand and are well balanced. I was not optimistic when I initially purchased this set but after a year of use, I cannot recommend this set enough. You are getting an incredible value for your dollar. Update (November 2021) - still an awesome set! I use the two primary knives almost daily. I’m going to be getting those two knives professionally sharpened soon ($8/knive). Handles are solid and blade goes up thru the handle. White finish looks great but most important aspect is the sharpness and quality of the steel. Lowering rating from 5 to 4 Stars due to RUST issues. The knives have been hand washed and dried but primarily the steak knives and a couple others are showing rust already. ... show more

I bought these knives for my wife for Valentine's Day 2021. Her Henckel knives were done and I wanted to get her something a bit more fancy and just a significant upgrade in general. I did thorough research on Cangshan knives and was satisfied enough by what I read and saw to pull the trigger on this particular knife set. My wife loved the knives and they completely complimented our dark wood cabinets and white subway tile backsplash. These knives are durable, sharp and have great heft. They don't just look good, they perform well. Pulling them out of their wood block sounds like you're unsheathing a sword; no joke, you get that "Shinggg" sound. I was a bit reluctant to buy these knives because of the significant price tag, but as a premium consumer, I'm all too familiar with getting what you pay for. Lets see how they hold up. ... show more
