  • A great proofing bread box for the bread baker.
The question they ask you when writing a review is, "What should other customers know" about this product. Well, here it is! If you are new or interested in making sourdough bread, a proofing box is a necessity. Why? The purpose of the proofing box is to stabilize your dough’s temperature. Why do I want to stabilize the dough temperature? It will give you a better idea on how long to “proof” your dough. What does proofing do to the bread? By stabilizing the temperature to a certain degree, you can check a chart on proofing times to see when your bread has reached its final proofing stage. If your dough hasn’t proofed long enough or too long, you will end up with a flat loaf or gummy loaf with an uneven rise. What makes this proofing box a good one to buy? A few things. 1. The ability to stabilize the temperature to what you set it at. The ideal maximum temperature is around 85 degrees. In photo four, I set the controller to 100 degrees and set it for one hour. It started out at 79 degrees, photo five, but by the time I remembered to take a picture of the controller it was already at 84 degrees. In less than ten minutes it was at 103 degrees and thirty seconds later it was right at 100 degrees, photo six. The interesting point to note here is that the internal sensor saw it had reached the desired temperature, and then quickly shut off the heater mechanism to stabilize that 100 degree temperature. 2. It won’t take as long to proof and you’ll be able to cook your bread quicker. Ideal if you are on a tight schedule or want to cook your bread from start to finish on the same day. If you want to let it sit overnight to cook your bread first thing in the morning, you should set it at a lower temperature, say 65 to 70 degrees. With that being said, if you live in an area where the summer temperatures are high and your house is already at 80 degrees, the proofing box may not do you much good. But in the winter when your house is in the 60’s. This is where this proofing box will shine. 3. The oven is insulated nicely, it provides heat from the back, front and bottom panels providing a nice surround of heat. 4. The internal temperature sensor and the metal shelf help to keep the dough at a set temperature. In my experience, setting your dough on the floor without the metal shelf may cause a hot spot in your dough and not proof evenly. 5. When not in use, it folds flat for easy storage. Also, there is a window to peak at your dough so you are not constantly opening and closing the lid and losing heat, see photo three. They also provide a zipper pouch on the backside of the box. Nice touch to store your recipes. A tip that might help is to always record your settings in a notebook. By keeping track of the recipe you are using, dough temperature throughout the process, indoor temperature and your proofing time and temperature will help you progress to better sourdough loaves as time goes on. You then can compare notes on previous bakes to adjust the time your dough needs to proof. Supposedly, the master sourdough chefs can look at, touch and jiggle the dough and tell if it is ready to bake and determine if it is proofed correctly. I haven’t reached that stage yet. This bread proofing box means I don't have to tie up my oven for a couple of hours (or longer, depending on the recipe.
