  • Wish I'd have done this years ago
My wife and I finally broke down and bought a slicer. With meat prices soaring, we thought it might save us a buck or two and still hope so. We shopped around and looked at cheaper versions, but after reading reviews about loud, cheap, plastic burning, inconsistent cutting, and generally less appealing cutters, we bought this one. I worked in a deli for several years while going to college, so I've used good slicers and right out of the box this one took me back to my deli days. It's a bit lighter than those and has a feature or two I'm not ecstatic about, but in generally I am very please and excited to have this in my life. First, the slicer is beautifully built and fairly streamlined for easy cleaning (though my meticulous first cleaning took at least 20 min if not more, but it was my first time disassembling everything). The instructions didn't really show how to assemble, but the only thing(s) you need to attach are the guards/deflectors so that wasn't bad. I did have one problem in that one deflector screw wouldn't fully tighten. It just sits and spins, and since the side with the screw doesn't have anyway to hold it firm once it is inset, I just couldn't do it. Not a deal breaker as it is tight enough not to wobble, but it would have been nice if the screw set properly. We hooked it up, did all the safety checks and then ran a test run of 2-3 min as suggested in the instructions. It turns on/off easily and was super quiet. I think I expected it to turn the blade a bit faster, but then I am used to professional grade. It made me worry that it wouldn't do the job adequately, but we had a turkey breast we had purchased for just this occasion and it cut through it beautifully! My favorite feature, after reading reviews to the contrary on other models, is the dial for setting thickness. Many don't have a dial with numbers and this does. We tried a 2, just for starters and it did beautifully. Then a 1 to see how thin it would go, and it still performed well. Then we tired a .5 (yes it has half markings) and it "shaved" the turkey just as the professional one would. Since it was turkey, it started to fall apart at this thickness, but that is what I would have expected. The ONLY complaint I have so far, is that the meat holding table/handle isn't quite big enough for large jobs, and the spikes that hold the meat are a bit short. They eventually started tearing through the turkey which made consistent slicing near the end almost impossible, but that is not unexpected on a smaller machine like this. It has been a while since I worked in the deli (20+ years), but I seem to recall we weren't able to cut to the very last tidbit either, but I might be wrong. Either way, it was a bit of a disappointment, but not unexpected. It does have a set of spikes on the side of the handle instead of just the bottom that allowed me to connect it to the meat when it wouldn't initially fit the whole breast, which was nice. I still held it with my thumb though, just to make it a bit more stable and that seemed to work until the meat was able to go completely under the bottom spikes. (Should have taken pictures, but we were having too much fun slicing!) We then cut a few slices of cheddar just to see what it would do. It performed well, and despite what appears to be slow rotation, it cut beautifully, so maybe it's not as slow as I think. The meat was directly out of the fridge, as was the cheese so they cut well. We wondered about frozen cutting, but haven't tried yet as we just got this last night and I couldn't wait to review. Clean up was not difficult. Do remove all the suggested parts as little bits of meat and cheese kind of go everywhere especially with a turkey breast that wasn't pressed. They also provided a brush that you can use to get in the nooks and crannies to get everything out. A nice and welcome touch. Came with lubricant as well so it can continue to slide smoothly for years to come, I hope. Overall, this product is great. I know it's pricey, but so well worth it. I am the kind of man who likes to save up and buy "the good stuff" if I can, and this one was worth it. I would highly recommend to friends. It is a bit heavy and if you don't have a large kitchen, hard to store because of it's size. Ours is in the basement and I worry about that as we get older, but for now, it's totally worth it! Highly recommend this machine. If I find any issues or problems, I'll come back, but if you don't see a return, trust that I am still very satisfied. ... show more

  • Initial thoughts on first use and cleaning
Purchased the 250 model. Overall I like the machine and what it does, it could use some design changes to make it more user friendly. Inspected after arriving, read instructions, disassembled and cleaned it. Reassembled to test it out on some smoked turkey breast. I really like the adjustment on the thickness dial, it's easy to use and makes some very thin slices if that's what you are after. The instructions are decent. It took a bit to figure out a few of the steps, but after reading and paws on the machine it becomes clear. It's a heavy machine meaning with a heavy product you slice it stays put and doesn't slide or rock when slicing, it is very stable. It is also quiet and worked very well slicing up 4 turkey breasts. (I'd rather smoke and slice up our own than buy the processed chemical/preservative infused crap anyway) Thais machine allows you to do that very easily. When using, if you keep your left hand down where the slices peel out, catching them before they get sucked between the blade and the blade guard will prevent messes and lost food. If the meat gets stuck in there the blade has the tendency to fling it all over or ball it up behind the blade. That balled up debris leads me to the next item. Two areas that could use improvement are the breakdown of the blade guard at the bottom. It is a process to get to the screws that hold that on and should be made easier to access and undo. A simple qtr turn knob located above the frame, could save a lot of time and broken plastic covers underneath the machine. To access them now, you need to remove a cover beneath the machine. This means removing three screws and undoing two of the feet. The cover comes off and there are two nuts holding the blade guard on that need to be removed. Not an easy or quick process. Not doing this leaves food trapped behind the blade guard. Two keyed standoffs with flats could be used to remove the guard from above and leave all that below stuff out of that process. Trying to fit a cloth, brush or anything else between the blade and the guard will result in cutting up what ever you slip in, or damaging your blade edge leading to more sharpening and wear. The second area that needs a redesign is the sharpening stone head. It isn't easy to get that aligned square to the blade surface. If this isn't square to the blade you will end up messing up the edge. If the shaft that slides into the mounting portion had a keyed slot and a key was machined into the shaft, it would be square each time it is reinstalled. At that point your only worry is the height of the stones on the edge. This would eliminate some variables leading to a bad knife edge. ... show more

  • Best bang for your buck
Wanted to wait a couple months to give a solid review. First off, this machine is heavy and we’ll built. Contrast to other reviews it is very easy to clean. No need to remove blade to thoroughly clean. If you want to remove blade, it’s literally 3 Allen bolts, tool included. Use cut resistant gloves when handling blade because this thing is razor sharp. To protect your self from blade while cleaning, make sure backing plate is all the way forward and remove center guard to expose entire front of the blade. Onto to paint chipping issue mentioned. The base is a plated material. I haven’t run into a chipping issue, but I do notice some scarring from cleaning. Having said that, this is not an area in contact with your food. You should be slicing with your right hand and catching product with your left hand, not letting it hit base. Blade and all areas in contact with food are stainless or brushed. Not coated. No contamination. Blade quality. I have put probably 250lbs of meat through this thing for my jerky business. Blade hasn’t dulled at all. Haven’t needed to sharpen at all. Cuts like a dream. Make sure your meat is about 65% frozen. Raw meat will obliterate and make cleaning a disaster. Fully frozen meat will not cut as well at all and blade will actually burn the meat and discolor it on the edge. Overall, great product, well built, very quiet operation, easy to use, and so far has been very reliable. Would definitely recommend. Absolutely best upgrade I could have made for cutting jerky. Consistent cuts and allows for super thin cuts and a tender final jerky product. Couldn’t be happier. ... show more
