Upgraded finally from propane to pellet BBQ. I bought the gourmet pellets for something else but since I had a new Dyna-Glo pellet BBQ on the way at the same time, I decided to use this blend in my new Dyna-Glo Signature Series 460 after it arrived and I could put it through some lengthy break in paces. After that I craved to cook something in it and decided to give cod fish a go since I had frozen chunks on hand already but didn't have any experience on how this pellet or any pellet choice would turn out. I was pleasantly surprised with the flavor the gourmet pellets imparted to the fish. 1 lb cod in an similar sized baking dish of 2 tbsp avocado oil and 2 tbsp of butter with a generous sprinkling of Tony Chachere's Original Cajun seasoning. Temp probe inserted then pan w/cod placed uncovered at the opposite end of the grill from the burner pot, slow smoked @ 160 deg for 1 hr. Next, basted once left uncovered then moved near to but not over the burner pot and turn up to 275F to finish raising the temp of the cod to 150-160 deg F. Drizzle the leftover but still warm oil/butter on rice. The fish was not dry nor overcooked much like it is when cooked over steam. Taste was so good it made me forgo the use of tartar sauce which up to this time I almost always used with fish. Now on to other BBQ smoker adventures ! ... show more
