Description

This 8 1/4" Right-Hand Precision Slicing Knife is made specifically for right- handed users. This is the result of a Kickstarter Projet based on re-creating the famous French-made 1968' DUX slicing knife at a fraction of the cost of its modern equivalent. This knife has a adjustable titanium coated aluminum guide that is very strong, rigid and light-weight. With Kickstarter, we improved the ergonomics of the handle but left the other elements of the DUX' 1968 intact. It features a stamped stainless steel blade with a serrated edge and an ABS plastic curved handle. This item easily disassembles for machine or hand washing. Warranted quality that will last for years!

Having used them for many years, I have found that these are indispensable utensils in the food service industry, and they're equally great in the home kitchen. The knife is lightweight, comfortable to wield, and not too short (about the length of a bread knife). The guide locks nicely and allows consistently even thickness in slices, the serrated blade is sharp and works very well on vegetables (gherkins to whole cabbages), breads (English muffins to dense loaves), and meats (de-boned fowl pieces to large roasts).   • Easy to use with consistent results
The knife is very sharp and the adjustable guide is very helpful. Whether slicing tomatoes, onions or other vegetables consistent width is key. The guide and knife is very well made. Comfortable to use with no risk of cutting fingers. The knife does take a little getting used to as you have to start the slice with the guide and then cut through it as you pull back. This guide knife is awesome, very sharp, cuts well, functions well. The metal guide is very loose and jagged when adjusting but straightens parallel to the blade when you tightenen. I like the handle shape better than the Victorinox, more comfortable for ME, the knife says “Carbon” on it in very light text, I did not know this before buying, I prefer stainless steel, BUT, we will see ... show more

  • Dull cutting edge.
The guide works fairly well on items that dont require a sharp knife. Its simply not as sharp as other bread knives i own. Id pass on it.
