  • Super roller;Great cutters
Style: 3 in 1 Roller & Cutters Attachment Set
I have owned various iterations of the K5 Kitchenaid mixers for over 43 years. My original, made in Hobart, Indiana, is still chugging alongside two newer models I have acumulated over the years. I have used the official Kitchen-Aid pasta roller & cutters hundreds of times. The roller works well, but the cutting blades are not precise, and I found myself having to pull apart and seperate strands of poorly cut pasta for years. This problem, plus the need to change from the roller to the blades of the 3-part contraption prompted me to look beyond and consider this unified unit. It was also very reasonably priced. I am very pleased with its function. It rolls pasta dough perfectly, and cuts precisely. Even strands of fine spaghetti are cut cleanly and seperately. Plus, the unified head speeds up the pasta process significantly. There is no more unscrewing the roller from the machine head, and then remounting a cutting head before cutting pasta strands. You can easily switch from fine spaghetti to broader fettuccini within the same batch of dough without stopping. All of this great function is of course based upon having a pasta dough prepared with optimal proportions of liquid to flour. So many of the complaints listed in the reviews boil down to wet dough. This is also one source of the concern with "cleaning the machine." A pasta machine cleans itself: Let any residue dry completely and then let it crank a bit. The residue will fall out. The ravioli maker is a different story, (because of the filling) but none of those work well anyway. My experience with making ravioli for more than a half century is that a ravioli mold is a far better way to go. Just use the machine to sheet the dough and lay it on the mold. Use a large pastry bag to dole the filling. The only downside to this attachment that I can see is that the operater should be extra vigilant while using it. There are three moving parts, since the roller and both cutting blades engage and roll during every use. I make sure my cuffs are rolled up! ... show more

  • This thing is great!
Style: 3 in 1 Ravioli & Pasta Maker Attachm...
We had the old style pasta machine a long time ago and let it get away from us. Most likely I let my son have it when he moved out, then my two twin nephews moved in to go to school in our area. We require them to cook one night a week meaning I have two nights off deciding what's for dinner. The caveat that they can make what ever they want and I would teach them to best of my ability how to make anything they wanted to try. I've always been a make it from scratch kind of cook and think it's good for these young men to learn how to cook. Of course one of them wanted to know how to make homemade pasta. My husband was all for buying a pasta machine again as long as he got some fresh ravioli out of the bargain. When we had the old school machine I was very reluctant to make ravioli because of the hassle. Once you made the sheets of pasta you had to lay them out place filling and top it with another sheet then seal the filling around eat ravioli before cutting them out. it was so time consuming. This definitely had a learning curve but for the most part this thing worked beautifully. Not only does it ease making the pasta since you don't have to use one hand to crank the machine while you are maneuvering the sheets of pasta through the rollers with the other but there is also a fairly good system for churning out the ravioli. I also think this is pretty versatile as far as what it offers in the pasta you can make with it. You can make spaghetti, angel hair (you simple make the sheets thinner before cutting), lasagna noodles (you don't run the sheets through the cutter just cut the length), and ravioli. As far as clean up I was a little reluctant about not being able to get the pasta roller wet but It cleaned up pretty easily too. Long story short this is definitely worth the money! ... show more

  • Practice Makes Perfect
Style: 3 in 1 Ravioli & Pasta Maker Attachm...
The pasta attachment is sturdy and heavy which is a good sign that it is well made. If anything, follow the directions, follow the directions, follow the directions! It may seem easy to use but winging it is not really the best way to go about it if you are not an experienced pasta maker. The dough that you use, and I used one that was my own recipe and one that came with the product, needs to be fed through the pasta attachment on setting one several times to make it pliable enough to use. The whole reason for me getting this attachment was for the ravioli maker. Using the dough made per the recipe in the instruction booklet, it is worth it to follow the instructions of trying out the ravioli maker without adding any filling to get the hang of it. I watched in horror as my non-instruction following husband crammed a ton of filling in the hopper and destroyed almost a full sheet of dough along with my yummy, not abundant quantity of filling. He contemplated his wrongdoing and did the next sheet with no filling....like the instructions suggested. And that is not all of the improvising and adjusting he did. Once he got the hang of the feel of the dough and how it was supposed to run through the machine he decided that the plastic hopper clip-in piece was not needed and if you started to turn the dial, the hopper makes these neat little holes where you can place the perfect amount of filling. He also sidelined the scoop that came with the pasta maker in favor using his (CLEAN) hands on the filling. It was shredded chicken with roasted garlic but I am sure ricotta cheese would not be as easy, so a spoon or, fancy that, the included scooper might work better. Took a couple of tries with not so pretty, yet passable, ravioli to be produced but by the third or fourth batch they were beautiful. First note: Using the recipe for the dough provided, when the dough gets on the dry side and the ends shred when putting it through the pasta maker on setting 1 (knead) add a little water to your hands or on the dough to make it more workable. Second note: Putting the dough through the pasta maker on setting 1 SEVERAL times is an absolute must to have perfect, non shredding dough. We are glad we bought this product and would recommend it to all instruction reading people. Remember to read the instructions on clean up. It is easier to let the attachment sit and the residual dough to dry to make it easier all around. ... show more
