  • Cooking takes MUCH longer than they say but been enjoying it for vegan "meat"

I have actually only made vegan lunch "meats" in this so far. You make the same kind of gooey mess that you would with ground meat, only it's with tofu and wheat gluten and spices, and then you cook it. I have actually not been able to find anyone online who has instructions for using one of these with vegetarian lunchmeat, but there are a few places that tell you how to prepare it then wrap it in aluminum foil to cook. I like the results of the press better because the pressure from the spring makes a denser "lunch meat." I have had trouble both times with the seitan-like loaf sticking at the bottom and sides. I could probably use baking parchment, but when I get around to it, I have a roll of silicone that I am going to cut into a circle for a permanent solution for the bottom. My biggest annoyance is that the manufacturer instructs you to cook your food for 20 minutes. If you look instructions for these up online, you'll quickly find out that you can expect more like an hour to an hour and a half of cooking time to get the interior of the meat up to 160°F which I believe is the recommended temperature for ground meats in general. I would say that my experience with the vegan loaves is about an hour and a half to get up to 160°F which seems to be approximately the safe temperature for wheat products as well. I got the option with the glass lid. Since this was the first time I was using one of these, I liked the idea of being able to see inside. It's fine, but I would probably recommend the stainless top over the glass one. I've used this twice now for loaves with no trouble, but both times I was paranoid about the glass breaking which would ruin the entire press along with the food inside it. There isn't much to see anyway since the bottom of the spring is a solid stainless plate. The glass does let you see if your food is leaking out the small holes in the top where the spring attaches and it does make inserting the thermometer easy, but for most people, I think the stainless top might be the better option. ... show more

Saved lots of meat parts over the holidays in anticipation of making my own deli meat. After the holidays with lots of meat parts to it was time to give it a go. I used a Stock Pot we had since its was narrow and tall enough for the task. I used pork for my first time. Found some recipes online since it does not come with a recipe book or directions, BTW, which is ok. After watching some tube videos, which really helped btw, if felt confident enough to make my own. I used olive-oil to line the inside container but saw some other videos that used some kind of liner, which isn't a bad idea either. I mix the pork iwth some ingredients and cooked it according to the 'tube' videos. To cook, I just put in outside in a ice-box (temps was well below 32F). and next morning ran one of those long baking spatulas along the edge to let the meat ease out, which did so nicely. Wasn't the prettiest or most professional looking deli-ham but it was good. There is some effort into it but if you have the time and the desire this could be another addition to the butcher's kitchen arsenal. For cleaning, everything was actually pretty easy. Just spray and run through dishwasher and it cleaned just fine. Would recommend for those who want to make their own unique deli meats without all the additives that is found in deli meats from the store. ... show more

  • Fun way to get creative in the kitchen!
A great addition to the kitchen of anyone who wants to lessen weird ingredients in their food and have fun doing so! Let your imagination run wild trying different flavor combinations, you just might create a "signature" lunchmeat. Before using this I watched some YouTube videos to familiarize myself with the process and get some ideas on seasonings. I'll be using this on a regular basis. Recommended! ... show more

  • Deli meat without the preservatives (even those naturally occurring ones)
I am trying to live a clean, nontoxic AND nutrient-rich life in a completely toxic-filled and nutrient deficient world! (reread that) So, lunch meat is not clean, having tons of "stuff" in the ingredients list. I found this "ham press" and it had never occurred to me before that I could make my own pressed meats (or pressed whatever)!!! And it's stainless steel...yes, please. Anyway, getting back to the nutrient dense food, I plan to raise a few birds next year and use some of their meat to make deli meat with. After Christmas this year, I will put this to use with the leftover ham and see how it goes! The press container is thick. As far as I can see, there are no welds or tacks anywhere on this stainless steel ham press!!! Many inexpensive pieces are tacked or welded together and I don't trust those welds not to have some highly toxic chemical in them that would for sure leach out during cooking! The lid sort of slides into place with three notches. I recommend get the stainless lid cause I don't see why you would need to see down into the press. The thermometer tells you what you need to know. I recommend this deli meat press for anyone wishing to take their health into their own hands and out of the hands of Big Food. ... show more
