  • Fluffy and perfect every time – Course 1 White Bread is all I need!
I’ve been using the Zojirushi Home Bakery Maestro mainly for Course 1: Basic White Bread, and honestly, that alone makes it worth every penny. The bread comes out incredibly fluffy and moist, with a light, crispy crust. It tastes like something you'd get from a high-end bakery. What I especially love: Consistent, perfect results every time Super easy cleanup – just the pan and kneading blade Compact 1-lb size that's easy to handle Simple operation – just measure, load, and press start I’ve given loaves of this white bread as gifts, and everyone loves them. People are always amazed that it’s homemade, and it makes a thoughtful and delicious present.   • Makes good bread with a little bit of work
I've made probably 45 loaves of bread with this machine, mostly White (using active dry yeast) or Quick White (using instant yeast). They're easy to make and tasty following the included recipe book. I've even been able to adapt a few from various recipe websites by adjusting the ratios of the ingredients so the flour comes out to about 2C. Overall the machine works great, although I have a couple of medium complaint and a couple of small ones: My only real complaint is that the ingredients don't always get mixed fabulously in the beginning (the water/fat will cause some of the flour/salt/sugar/yeast to stick to the wall) and so you'll often end up with the burnt piles of stuff at the corner of the bread. If this ends up being most of your salt or sugar, the result bread is not great. To fix it I've been premixing all the dry ingredients except the yeast, and then scraping down the sides when the Add Ingredient beep happens. This means you get perfect, beautiful loaves with only a bit more work. While I'm home all day that's no problem, but I may start to feel otherwise once that's no longer the case. As for minor complaints, it would be great if it could detect that I've left out the mixer paddle (yet again), although I realize that's probably challenging. It would also be nice if the instruction manual or recipe book could talk about how to go about making your own recipes. Like I said, I've had some success doing that, but it'd be nice if they explained how to go about designing one. There are several "homemade" modes, so I'm not sure why they didn't do this. ... show more

  • Works well; beautifully built; high quality
The Zojirushi bread maker is a well-made appliance, with good instructions and recipe book. It makes one-pound loaves, with the ones we have tried having good taste and texture. We also made a satisfactory pound cake, and the Zojirushi web site has many more interesting breads and cakes to try. There are 15 settings that vary the timings of kneading and rising cycles for various kinds of bread and cakes, and also to allow removal of the dough so it can be made into other shapes and cooked in a regular oven. The adventurous user can program and store additional settings. It is easy to use, very quiet and unobtrusive, and the paddle leaves only a small slotted hole in the bottom of the loaf. We have not used the timer function or the dispenser for nuts or fruit. The pan is easy to clean, and the paddle can be removed most easily if allowed to soak for a while. ... show more

  • Great quality bread machine for fresh milled flour, fmf
I got into sourdough and then fresh milled flour fmf bread baking. I was looking for a set it forget it way to make bread on the fly and all the home bakers raved about the Zo brand.. My poor old kitchen aid was not powerful enough to knead the fmf dough so I bought a heavy duty mixer that is known for bread making. It was a bit overkill as I only make one loaf at a time. I wish I researched the bread machine as an alternative to a dough mixer because I would have saved myself a lot of money! Why this model works so well…. It has the self programmable settings (3) that works for fmf. Fresh whole wheat flour does not behave like processed store bought flour. It needs more time to rest but less time to rise. So the preprogram settings just wouldn’t work for me. Once I figured out the setting times I needed, I now get a beautiful 1lb loaf of bread that takes no more than 10min of hands on time. It’s so easy! The machine doesn’t labor with the kneading and it heats high enough to get a good rise. I have one program for a loaf of bread start to finish and one program for making dough that goes through the first rise and shuts off. I can then take the dough and shape into whatever I’m making… dinner rolls, hamburger/hotdog buns, etc. it’s a bit heavy but easy to put in my bottom cupboard because it’s vertical not wide. It’s very quiet and stays put while mixing. The only con I have is the lack of information for FMF baking/recipes. It took a lot of experimenting and internet search for the self-programming times to make a simple loaf of bread using FMF. Also 90% of what’s out there is for 2lb loaves so I just halve the ingredients. I plan to figure out sourdough eventually but I haven’t found anyone using a bread machine to make sourdough.   • Makes good bread. Easy to use.
Very happy I bought this. Just the right size for 2 people and very easy to use. Good instructions and recipes. Breads are almost as good as made-by-hand and very consistent. Excellent machine.
