Hands down - a perfect multi-use chef's knife. I've got big hands, and the handle fits perfectly. The weight is nice, evenly balanced, and it glides through most anything. If you own a single knife, this should be the one. I've been cooking professionally for over a decade, and I continue to use my 8" Wusthof chef's knife that I bought for culinary school 11 years ago. The kitchen staff pitched in and got this as a gift for one of our coworkers. The weight and balance are impeccable, it holds an edge extremely well and is easy to sharpen. An 8" chef's knife with a full bolster is the most versatile knife you can have. My 11 year old knife has been sharpened down about halfway through the grantons and is still carrying its load like a boss. While this new one was a gift and obviously I didn't use it myself, I think the new handle material will be a significant improvement over the old bakelite handle that mine has, which is showing a few cracks at this point (although I've heard Wusthof will repair that for you). Don't buy a Global. Don't buy a Henckel. Don't buy a Shun. Don't buy a Victorinox. Buy this. Not that those other manufacturers don't make good knives, but this is the one that will see the most action. From a professional that uses this knife every day for hours on end and has tried dozens of other brands and styles, THIS IS THE ONE. ... show more
