Unscrew the stainless steel nut. 2. Remove the round wooden lid. 3. Fill pepper or salt into the mill 4. Reposition the round wooden lid onto the base, and screw the stainless steel nut back onto the wooden lid. 5. Hold base firmly and rotate the top wooden lid clockwise to get the particles. 6. Adjusting from coarse to fine: Turn the nut clockwise for fine grinding, and anti-clockwise for coarse grinding. How to Clean? Simply wipe with a dampened cloth after use. For a better clean please grind some rice. The residue of the seasonings left in the wooden mill can be cleaned up along with the rice powder. The wood finish is so smooth that it is often difficult to get a good grip on it. If your hands are the least bit moist, forget it! But otherwise it is great.

Works like a pepper mill, it's small, but for me it's perfect, don't need a huge mill. The wood was a little rough at first, but after working in a little bit of oil its plenty smooth and comfortable to hold.

I looked at many pepper grinders and had to choose between the plastic ones that would break (plastic gets brittle with age, you can't avoid it) or wood, which can last generations. This is a really nice smaller grinder that fits in the hand nicely. FYI: The only thing, it says in the listing that it is "oak" (although the box it comes in just says "wood"). As a matter of fact, every wooden pepper grinder on Amazon says that they are "oak". But I am fairly certain that they are not, since they are all made in China. My best guess is that the wood appears to be a variety of lauan (also erroneously called Phillipine mahogany, which it is not). Lauan is a name for Shorea genus woods, also called meranti, which can vary from very light to very dark, as soft as balsa, or quite hard. It is a common universal wood for furniture and stuff in the far east. Actually, it can be better than oak, since oak will check and crack with age, while lauan is more stable.
