This is the key to hot fast crispy wings. The heat was over 550 degrees Fahrenheit and the wings were awesome, stands up to saucing so well! The vortex has been awesome in my Weber kettle. So far I have grilled some chicken wings, thighs, and sausage. It produces very high heat directly above it for searing and when that heat hits the dome shape of the lid, it circulates around the grill giving you high indirect heat almost like an air fryer. My husband sent me this item as a gift suggestion for Father's Day this year. He told me that by using the Vortex on our Weber Kettle grill we would have crispy chicken wings from what he read online. The idea that we could have crispy chicken wings by grilling and not frying them had me sold that he would get this for Father's Day last week. It arrived in a large Amazon box and I eagerly wrapped it up excited to know that this week, we were going to have some grilled chicken wings. On Father's Day he opened up the bag that held the Vortex and a Dad Cave Cookbook from our daughter and told me he was disappointed. The thing is it wasn't with the gift. It was because he had not prepared chicken wings to grill that night. A few nights later after we brined the chicken wings we had purchased he excitedly worked with my 11 year old daughter on how to grill the wings using his new Vortex. When we sat down for dinner the wings looked PERFECT. We had both dry rubbed and sauced wings and both looked better than I have ever seen but the thing was, they tasted even better!!! The wings were crispier than I have ever had fried and sauced and cooked evenly. Having used other devices in my Weber charcoal grill to create 2-zone cooking, the circular shape of the vortex fits perfectly, leaving a generous circular zone around it for grilling; and the conical shape allows a smaller or larger area for direct grilling. It's an inexpensive and very useful tool, well worth having to enhance your indirect grilling.
