After 10 years as a professional cook/chef, I finally decided to try the "boring" Victorinox knives. My set of expensive Zwilling knives got stolen and I didn't want to shell out for another fancy kit. The Victorinox knives have been a refreshing surprise to say the least. Extremely sharp, nice thin blade steel, holds a good edge but easy to touch up, cheap enough to beat on, and the wooden handle is a perfect ergonomic design. My only complaint is that there's no weight towards the heel, so if you're used to chunky German knives with a heavy handle, it'll be an adjustment at first. Overall, there's a reason these workhorses have been used in professional kitchens for decades without any real changes. I was late to the party. ... show more

Expensive but very worth it. Very sharp (be careful), nice thick blade, and durable. Do not place in dishwasher because it will ruin the wood handle over time, and also because it's really too sharp to place in there.

I appreciate the customer service for this item. The knife I ordered was too large and the return process was flawless. Happy to recommend the item because it appears to be high quality, but I thought the 10" knife was a total length of 10", rather than the length of the blade. Now I know.
