Formerly Forschner In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. Following these simple guidelines will ensure that you get the longest life out of your knife! Hand Washing Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately. Dishwasher While Swiss Classic knives are dishwasher safe, we still recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge. Maintaining your Knife’s Edge For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best, but remember that a honing steel will not sharpen a dull knife. Honing steels are maintenance tools and are used to help keep an already sharp blade from degrading. During use, a knife edge becomes rolled or turned from direct contact with cutting boards, bones or other hard objects. In this case, honing is necessary to straighten the edge of the knife. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. If your knives are dull, pitted, or you see visible nicks on the cutting edge, you’ll need to sharpen with a Swiss Sharp Handheld Sharpener (49002) or bring to a professional for re-sharpening. History and Heritage In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1891, Karl supplied the Swiss Army with its standard issue Soldier’s Knife and in 1897 with the Officer’s Knife. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable” and used in the production of his cutlery, Karl changed the name of the company to Victorinox. It is from those humble beginnings that a worldwide icon was born. Today, Victorinox is still owned and operated by the Elsener family, and both the company and family still resides in the small village of Ibach, Switzerland.

Sharp. Does the job. Not the fanciest knife in the block, but it's a good value for the price. The metal is somewhat "thin" - it's not a hatchet or a cleaver, so it's not a good choice for chopping wood or whittling toy boats. So, my poor 50 year old paring knife finally bit the dust. I used it every day.. it was the perfect size and weight and balance for my hand. My son took a chance and after he spent time researching paring knives both expensive and inexpensive.. bought me 3 knives. 2 of them are HENCKELS, which are very nice but this is my go to favorite. Once I got used to it being so lightweight, it’s comfortable and easy to use and sharp. You can slice super thin slices of onion easily, you can pare and apple easily, whether your slicing using a cutting board or paring potatoes or apples in the hand.. this little knife works very well. Looks like a little cheapie but it’s pretty powerful. Granted I’ve only been using it a month and a half so I don’t know how long it will keep its edge but I liked it so much I bought one for my best friend. ... show more

The Victorinox Swiss Classic is not the nicest, hardest, or best paring knife on Amazon, but I think it is the best buy among paring knives on Amazon. It arrived super sharp. It slices fast and it sits great in the hand. It won't last as many years as a forged knife, but for this price I can go through ten Victorinox in the lifetime of one expensive forged knife and still have moolah left over for a cutting board. ... show more

Functionally it's a good paring knife. It has a very sharp and thin blade that works well. Deducting a star because the plastic handle isn't that nice compared to the rest of my knives & won't impress anyone based on looks or feel. Also had to buy a blade cover for safe storage. I cook daily, use a paring knife at least twice a day. This was out of the package perfect, sharp without cutting a finger off. I love to slice upwards and hit my thumb to stop. Easily slices through hard carrots and celery, chops through skin on tomatoes, the handle grip is perfect for me. I've purchased several paring knives that were a total waste, not sharp, handle felt awkward, or so sharp it cut through my skin easily. Whoever made this knife had a cook like me in mind.
