This knife is a workhorse. The non-slip handle fits the hand well. The blade is very sharp and seems to maintain its sharpness well, especially when you give it a couple of swipes with a hone before use, and so far, I have not had to use a whetstone on it. It works equally well for larger items, such as steaks and russet potatoes, and more delicate dicing work. I bought the Victorinox 8" chef's knife because almost every review I read on "best chef's knife" listed it as the best knife you can get for the price. This is a great starter knife for anyone getting into cooking! Extremely sharp out of the box, light and easy to use. Handle feels great in the hand. Much cheaper to purchase one of these and figure out what you do or don’t like and make future knife purchases based on that. I’ve used it on meat, veggies, etc and it works effortlessly.
