These do just as well - if not better - and I find I do not have to be as careful because they did not cost nearly as much - which I believe makes the job easier. This Victorinox 6 Inch Curved Fibrox Pro Boning Knife is so good, I couldn’t stop at just one—I ended up buying three more for myself and have purchased more and given them as gifts! Nothing says "I care about you" quite like a razor-sharp, semi-stiff blade, right? Just make sure you grab a knife honer while you're at it, unless you want your friends coming back asking why their fancy new knife suddenly can't cut through a tomato. Wow! I should have had this long before. I had a raw chicken in pieces and I easily took the backs off of the thighs, the bones off of the breast pieces. One, two, three. Super sharp!
