Bought these to switch to an induction stove. They distribute heat evenly, making it harder to burn anything. I made macaroni and cheese, which in a thin stock pot always burned, but this one handled it without any burning at all. I can easily cook 3 lb of mushrooms in the large pan. I would say food can stick if you don't prep the surface. The only item I had any trouble with was scrambled eggs. They stuck about as much as I would expect, though not terribly bad. NOTE: These are very heavy pans - I'm used to holding them up in one hand while scooping out the contents with the other. I can still do that but just barely, and I have fairly strong hands. These are nice heavy duty pots but the handles get scorching hot And, the glass lids don’t have a steam release hole so you have to off center the lids on the pots to let the steam release or else it looks like the pressure will make the lids blow off when cooking. I won’t return them because it’s way too much work to pack them all up but be AWARE of the handles getting extremely hot and the lids not having any type of steam release holes. Heavy duty and should last since they are stainless steel. I wish this had directions on how to handle them so that they’re wouldn’t be any mistake. I’ve never used mine over anything but medium heat from my own research.

I was concerned about buying these pans because of the reviews about food sticking to them, mainly eggs. The pans were rated highly and they were one of the top two sets of pans rated by Consumer Reports; the other set being more than twice the price. I did some research on how to cook with stainless steel pans and decided that the complaints about food sticking were most likely due to improper cooking techniques. I decided to take the plunge and order them. The picture attached shows my pan after cooking eggs. (It is not washed in the picture so you can see a little butter residue but you can also see that nowhere in the pan is there egg residue stuck to the pan.) The pans are heavy duty and provide for even cooking throughout the pan. I would suggest that anyone purchasing stainless steel pans, regardless of purchasing this set or any other, watch the YouTube videos on how to cook with stainless steel. Also, research the different kinds of stainless steel pans and I am sure you will find that the construction of these pans is of high quality and the price is unbeatable for the quality of the pans. Key points when cooking with stainless steel: Heat the pans prior to adding oil; use the water test to determine when to add oil/butter (watch videos on YouTube to learn about this); use only low to medium heat. While these pans are dishwasher safe, I would highly recommend hand washing and drying them right away to keep the shine and prevent any damage that can occur from chemicals in dishwasher detergents. I find comfort in knowing that I am cooking with a high quality pan and not with pans that could possibly emit carcinogens into the food that I am cooking. ... show more

    • Heats great but discolors easy
I love the fact that this is a try ply clad collection because they do heat evenly and all the way up the side of the pots and pans. They also heat very quickly. My only dislike with these is that they discolor and scratch very easy. I have a different brand of SS pots that I have had for 12 years and they do not even have the scratches or the discoloration these have after only 1 use. For the price they should not discolor or scratch as easily as they do in my opinion. ... show more
