  • Exactly what I needed! Here's a rundown of how I use everything (for bread and also other things)
I was looking for a more complete set for baking. I am not a beginner...I have been baking bread for over 20 years now and have been using a silicon banneton for awhile. But as I gain experience, I've wanted to upgrade. I think this would also be a great way for beginners to start, you don't need experience to use this! The banneton is because looser dough like sourdough or Jeff Herzog's dough don't have the strength to rise on their own without some support unless you want really flat loaves. These bannetons are lovely. They are actual baskets with cloth inside (make sure you flour it well!) You rise the dough in the banneton and then flip it upside down onto the silicon sling. This is critical if you do what I do and bake the bread in a hot dutch oven! I put the dutch oven in the over to pre-heat and then somehow need to get the bread in without any drama. The silicon sling is great. I just drape it over the banneton and then hold it on both sides and then flip the whole thing over at once onto the counter. Then the bread is on the sling, nice and tidy. Then I can lift the sling into the dutch oven. I can either bake it that way or slide the sling right out, easy peasy. So much better than my previous method, which left it sliding down the side often or me burning myself! It's really important to slash the top, otherwise the bread can't stretch as much as it needs and it's heavy and dense. The lame holds blades for slashing, which makes a huge difference compared to a knife because they are so sharp. That's how you get beautiful patterns instead of just hacking it apart. The cover is critical because otherwise you'll slice open your finger reaching in your drawer! Or for safety, you can just dispose of the blade each time. Though I find they work for quite a few loaves before getting dull. The bread bags are sweet--at home I just store the bread my usual way but when I giving it to someone, the bag looks great and also makes sure they don't let it get soggy or dry. A quick rundown of what else you get: -a Danish dough whisk--I lived most of my life without one and now have several because they are so much nicer for bread, pancakes, muffins, etc, etc -starter jar and cloth lid--I have always just kept my starter in a regular jar and eyeballed it but this lets you actually have measurements, which is nice. The cloth lid lets it breathe. -bench scraper--again, I have a couple of these now because they are so handy--great for picking up cookies you've cut out, or working with dough -cleaning brush--it's fine, I like that it's small and angled -silicon spatula--good for scraping things out of jars such as sourdough out of this jar or peanut butter (which is why we have several of these now!) -receipt manual--it's fine, there's a lot of recipes available online, I think this helps make it a complete gift set so you're not like hey, here's all this stuff, good luck figuring it out! But without having to actually purchase another book For someone just getting started with bread, this is a much nicer way of starting than making do like I did. For someone upgrading, this is a nice luxury to finally have easier and nicer materials! ... show more

  • This set has what I need
I have been making bread for about 30 years using breadmakers. I also have had the same sourdough culture going for over 20 years. I have made sourdough breads before in the breadmaker, but that is always using commercial yeast added to help it rise. I decided I want to make true sourdough bread with no commercial yeast. So, what I needed was a second culturing jar (I have one for white flour and now a second for whole wheat or another type flour), a banneton (you get two sizes in this kit!), a sling for lowering the dough into a Dutch oven, a Danish whisk, and a Lame. The rest of the stuff in this kit I already have. I used some of my white culture to start a coarse whole wheat culture, which you see in the pic. While that was growing, I baked my first white, all-sourdough loaf! I think it came out well, and was happy to have the banneton and sling to help shape and move the very loose, sticky dough. To 'season' the banneton before use, lightly mist the inside of it with water and sprinkle rice flour (no gluten) all over the inside. Once it dries, you can tap out the loose rice flour and you're ready to go. I won't use the cloth liners -- I like the pattern the banneton leaves in the dough. But if you use the liners, you need to rub rice flour into them well. I found a great web site to help learn all there is to know about sourdough, along with many step by step recipes and instructions.
