HOLY CRAY these are sharp!! The first thing I cut was chicken and it went through it like I was cutting butter with a red hot knife. ZERO effort with my first cut. The next thing I cut was baby back ribs and it went through the bone (on accident) without an issue. My only comment would be WATCH YOUR FINGERS. The different knives and sizes allow you to use them for various kitchen tasks, which is nice. They've held up very well to daily use for about six months now, so I'm definitely a fan! Building a quality knife set tends to take time and research, and I'm really happy that I started out with this set.

These knives are the sharpest knives I have ever owned and - at least so far - I REALLY like them! I needed something sharp enough to thinly slice beef for Italian style beef and the large knife does the trick as well as a full sized meat slicer! They DO come with a warning to NOT test the blade on your finger and that is spot on. I made the mistake of barely bumping into the tip of the paring knife and yep! That pricked my finger. So DO be careful but if you want good knife quality, these knives get my vote!
