My 8 inch Shun chef knife was mishandled by someone at work and the blade was broken so I decided to replace it with this 10 inch Chef Knife. I work in a very fast paced kitchen and this knife is a no to use! I have no problem cutting an entire stalk of celery at once... huge time savor and it keeps a nice sharp edge. I just purchased a set of Wusthof Classics, a set of Zwilling J.A. Henckles 4 star II and this 10 inch Shun. They are all brand new. I wanted to compare them all side by side and yes I know how crazy that was. The Shun is the best and of course it also cost the most. Appearance: (Shun - Big advantage) The Shun looks like a work of art, it has a WOW factor that the other knifes lack. The other knifes look good but they look more like nice tools than art. Cutting Abilities: (Shun - Small advantage) As far as sharpness the Shun is sharper and cuts a little better when compared to the other knifes. The difference, however, is really very small and without a side by side comparison most people, including myself would not notice the difference. The Grip: (Depends on your preference but for me Shun - big advantage) I love the grip on the Shun it feels more like holding a golf club than a knife and that makes it fun for me. The grips on the other knifes are good as well and to be honest probably much more practical for cooks who spend long periods of time cutting. Value: (Wusthof - small advantage over Henckles - large advantage over Shun) The Wusthof and the Henckles cut almost as well as the Shun for about half the price. For someone looking to get the most utility for their money I recommend the Wusthof with the Henckles a very close second. Conclusion: This Shun is a great knife, it is the knife I want to use the most. It is very different from what I have used in the past. I just find it a blast to use. If all you are interested in is having a good quality sharp knife the Wusthof is a better value for your money. But if you want a good quality sharp knife with the WOW factor that is fun to use... go for the Shun. ... show more

This is my 4th Shun, and from a full battery of knives, I use them almost exclusively. I have an 8 inch Shun chef's knife, which I love as well, but purchased this 10 inch beauty, after reading and going through the exercises in the excellent book, Mastering Knife Skills: The Essential Guide to the Most Important Tools in Your Kitchen (with DVD) . Weinstein so much prefers a 10 inch blade, that I just had to try one out, and he is right. It does make a difference on how much control you have on a cutting board. But, be warned, this baby is a monster. If you are a home cook, get some knife skill education to go along with this beauty. All that being said, I have to agree with others -- knives are extremely personal, and you should handle several different brands and styles before you buy. Go to kitchen stores, and get someone to let you handle the knives, feel their weight and balance, and their personality. Some stores will even let you cut some veggies right there. Knives are a lifetime investment, if you get the right ones. So, before you buy, find out what feels right to you. ... show more

It's everything I hoped it would be. It's beautiful, sharp, and durable. The steel is extremely hard and holds and edge very well. Out of the box it re-defined my entire notion of what sharp was. Frankly it takes some getting used to. The knife glides through hard foods like raw potatoes or beats. It's easy to slice wafers so thin you can practically see through them. Always like the Shun, but did not get the 10' until I took a cooking class where I was able to test drive one. Really enjoyed it and decided to buy it. Personal preference, but like it better than the shorter version or the Santoku (which I also like)

This is my first Shun knife and is a beautiful knife. It is very sharp right out of the box as it sliced a large piece of sponge completely off when I cleaned it the first time. I was not sure if I would like the handle or not as I prefer contoured handles, but this knife is very comfortable to hold and use. I will probably be purchasing more Shun knives in the future if they are all like this one! ... show more

  • Good knife for the money

I'm tall with big hands, and the 10" knife suits me well. It requires care and patience to keep the edge in top shape, but the result is pure pleasure on the cutting board.
