Apparently, I've owned this knife for about 5 years. I'll tell you now, it is the most reached for tool in my kitchen. It keeps a fantastically sharp edge for a good long time, looks beautiful, and feels like it belongs in my hand. NOTES: - this is a knife made specifically for right handers - sorry, lefties! (I think they might have a left handed?) - this knife is made of exceptionally hard steel - it will crack or chip if you use it incorrectly. - this is an incredibly sharp knife right out of the box - visit Shun's website and you will see they offer FREE lifetime sharpening service - you just cover shipping/processing. Oh, and to anyone who has a chipped knife, they can fix it for free, you just lose a bit more material in reshaping it. Pretty cool. I can't say I truly knew exactly what I was buying 5 years ago - I was just replacing my trusty Victorinox chef's knife with something I just assumed was better. What I've learned over the last 5 years has made me a true believer in the quality of craftsmanship behind this beautiful knife. During the pandemic, I spent a whole lot of time in the kitchen preparing food for the family. I learned so many different cooking techniques and knife skills I never dreamt I'd have the time to acquire. I found that I truly LOVE cooking and don't mind spending hours preparing amazing meals at all. I find it relaxing and meditative. Having sharp knives is a big part of that. Anyway, just got lost thinking of all the awesome stuff I've made since I first learned how to scramble eggs as a kid. Just, wow. As for those reviews giving this knife one star? Well, dunno about the guy who chipped his knife "cutting a tomato", but that was hilarious. I have cut thousands of tomatoes, tons of other vegetables, meats of all sorts, and probably a million garlic cloves and onions... never had a chip and what a joy it has been! I sharpen my own knives and this thing has always taken the longest between rounds out of all the others. For anyone whose Shun is rusting - wash and dry your knife immediately when you are done using it, especially if you're cutting acidic foods! My favorite knife is now 5 years old and hasn't got a spot of rust on it, has never chipped, and never bent. I'm sure every once in a great while something will slip past QA, in which case, you ought to exchange it for a proper unit - you probably won't be disappointed. If you treat this knife with care and maintain it properly, it should last you a very long time. ... show more

I've had my knife around 3 months at this point and have no complaints! It has stayed wicked sharp and been fantastic for virtually every use case I've had thus far! It is light and easy to use, super aesthetic on my magnetic knife strip as well! The only thing I haven't tried it out for cutting through bones etc - thus far it has been limited to flesh and a few chicken joints. Overall though - would recommend, I see this being my workhorse kitchen knife for years to come! ... show more

I was skeptical that I could get an actually great knife off of friggin' Amazon, but I did. As soon as I started using the knife at home, I knew that this was something better than I've ever used before. I get it, as new, it should violate a tomato like no one's business. And it did. But after continual use, and keeping it free from excess water and avoiding scraping the board to gather veg, it keeps dazzling me with sharpness and the ability to violate tomate skins. I'm really loving the experience. So yeah, buy this one. Oh, and also keep in mind that you will have to work at keeping certain vegetables from sticking to the blade and building up while cutting. Got this as a present for my girlfriend almost a year ago and it’s holding up well. She likes the aesthetic of a “Japanese” knife but likes the western-style blade because she’s a roller not a slicer. I would like to remind anyone and everyone that this knife is sharp. Tried telling her this as the knives that she’s been regularly using were pretty dull, but she nicked her finger anyway. These have been getting used fairly regularly, hand cleaned as soon as possible, and dried with a clean towel. Haven’t had the need to sharpen it yet only hone, and they’re still very sharp. As with kitchen knives in general if you hand wash and dry with clean towel, they’ll keep their edge well and not rust. NO DISHWASHER ... show more

This chef knife is amazingly sharp, well balanced and visually beautiful. In the words of Joe Piscopo, it "cuts through schools" (movie ref: Johnny Dangerously). This was a gift for my husband and sous-chef. We cook at home at least three nights per week, and our dishes typically require a lot of meat cutting and vegetable chopping. This knife cut a beefsteak tomato into 1/4-inch dice without smashing it. He is taking the fat cap off a lamb shoulder as we speak without any effort. Manufacturer's literature suggests weekly honing and yearly sharpening. We'll see how well the edge holds up. ... show more

It's lighter than my Whustoff and Henkels chef knives so it takes a little getting used to. Edge is RAZOR sharp and feels great in your and. Love it! Tip has broken on both my knives and my daughter's chef knife as well. There is a quality control issue or manufacturing mistake. I won't be buying any more Shun knives My wustof knives are 36 years old and still have their tips ... show more
