I am a home cook who uses knives almost every day. I bought (4) of the classics: 8" kiritsuke, paring, 6" utility and 6" boning/fillet. All very sharp right out of the box. The website pictures make the handles look a little plastic, but they are not. Very nice looking knives. I bought them almost two years ago and they maintained a very sharp edge (I always use plastic cutting board and hand wash & dry). I finally had to sharpen (not hone) the boning knife a couple of months ago. I think that they are definitely worth the money. ... show more

I'm a career Chef and these are my go-to knives. I suffer from carpal tunnel and other chronic pain issues from a lifetime of physical labor. I needed reliable knives that weren't so heavy that they overly exacerbated my injuries. Shun is the brand I settled on. My first knife was the Shun santoku classic and I've been building my collection over time. Adding styles needed to complete tasks that I take on as my career progresses. This particular knife is great for cleaning silver skin off meats and achieving fine slices. It's not one that would be needed unless you do this often as it's highly stylized and isn't useful for general purposes. The metal used is stronger than German steel so more brittle. Using these on the plastic cutting boards provided in industrial kitchens blunts the edge pretty quickly. I use a ceramic honing rod that does a great job setting things to right after each project. ... show more

It's what I call an excellent trim knife. Very sharp and excellent to trim and cut up roasts, steaks and debone chicken and other meat cuts. A pleasure to use, because it is sharp, well balanced and has a nice thin blade that really glides through meat. Well made knife and I have no regrets.

I love these knives, knowing that I pay a bit of a premium for the aesthetic. This is well suited to a specific task of preparing cuts of meat for baptismm by fire. This would not be an introductory knife purchase, as a standard utility knife is largely capable of fulfilling the role that this knife does, but it’s a decent addition to the lineup for those who like to accessorize or ideally those with a specific need. I have not yet tried to sharpen it myself but the lifetime mail-in sharpening is nice to have available. ... show more
