  • Saveur Selects / Cangshan advice from a knife guy who’s tried them all:
As an admitted cutlery fiend, I’m here to confess that we have three knife blocks filled with exquisite knives. We joyfully own knives from Wusthof, Henckels and Asian names including Mak, Global and Shun, including their Kaji Chef’s knife. I’m a newcomer to Cangshan / Saveur Selects and highly impressed. Please forget the rubbish you hear demeaning Chinese knives. Cangshan is the real deal, has an office in California, and is the finest Chinese cutlery company bar none. I’ve now used three of Canghan lines and after first trying the Saveur Select Chef’s knife, this full block was such a great deal that I decided to order it, too. Of course, no cutlery line is perfect for all needs. Here are my specific impressions of these: First, let’s talk brand. As you likely know Saveur Select is Cangshan rebranded. Crate and Barrel and Costco also sell their own targeted lines of Cangshan knives. Williams Sonoma sells them, too. This is not to name drop but to demonstrate the inroads Cangshan has made in only five years. Although my aesthetic favorite is Cangshan’s TC line, for less than half the price this set is superb and unlike most full block sets, there are no fillers or clunkers. This line uses the same steel as heralded Wusthof Classico, one of my all time favorites, and a longstanding fave of pros, too. Like my experience thus far with three diffent lines of Cangshans, these are truly superb out of the box. In fact, only my Mac Santuko arrived as sharp as these. Let’s first discuss the most important knife for most cooks: The Chef’s Knife. This knife is well crafted and super good looking. This one even bests my Shun Kaji chef’s knife for sharpness at one sixth the price. The Kaji and many Japanese knives use a higher Rockwell steel. This does not mean a better knife but simply one that needs to be honed a bit more often. Softer steel is just as sharp and easier to sharpen. If I could change anything, it would be to have the bolster not jut backwards toward the handle. Yet, I use a pinch grip and am already used to it and don’t feel it. In my opinion, this is far and away the best $50 chef’s knife you can find. For most us us, the paring knife is also of crucial importance. Great balance. Wonderful. No bolster issues with this or any of the other knives, save the Santuko. This knife style from Japan became popular there after World War II and truly never includes a bolster. The typical Santuko is more flat across the surface, unlike the arching belly of the Chef’s knife that rocks as you cut. There is no one right Santuko style yet a bolster defeats one purpose of lighter weight. Using a pinch grip, the bolster does bother me with this one and puts the balance off as compared with the excellent Chef’s. Of this superb set, this is the only one I will not be keeping. Although most block sets come with a stand up block, I love the drawer style included with this one. If you prefer a traditional block, you can find an excellent one for under $35 and I hope Cangshan will sell their blocks separately, too. What about keeping these wonderful knives sharp? Cangshan uses a slightly uncharcteristic 16 degree angle and that’s why I prefer its inexpensive pull through sharpener, too. I think of this type of manual sharpener as the easiest way to hone knives and I prefer it even to my excellent honing rod. What honing does is gently puts the burrs back in alignment. Thus, if you do this once every several cooks, you will only very rarely need to use the left side more aggressive sharpening mode. I hope this too long review has been of some small help.   • Wow, these put my prior high end knives to shame
I have a nice set of expensive blades that are highly touted by everyday chefs. They cost a bit more than these, and are 15 years old, so these days they would likely be double the cost. That said, those knives did ok, but I expected lifetime lasting steel. I didn’t get that, despite using a professional sharpening system. The chips in the blade just keep getting worse. Enter these knives. The quality is obvious the moment you see them. The handle and full tang stands out immediately. They have crisp lines, that have a good contrast making them really have a substantial visual impact. When you pick one up, the heft is stark, the thickness of the steel is good and the balance between the blade and handle is nearly perfect. These come out of the box sharp, usually even with my high end steel knives, I end up putting them thru the paves for clean edges. But these won’t need anything but an initial rinse to get you cutting. I expect based on the thickness of the blades, the sharpness will last longer than my other set, Altho that means they will require a bit more effort to get them back to sharp, it’s a trade off I’m happy to make. My others are thin, which is why they chipped despite being very well cared for. So far, these are impressive and should I need additional knives in the future, this brand will be where I look. I actually intend to get a set for my mother, whom still cooks every night. She hasn’t ever had knives this high in quality, so I expect she will regret not making the jump sooner.   • Beatiful & High Quality
This set of knives with a drawer style knife block is awesome. The knives are very high quality and I really like the knife block that is designed to be tucked away in a kitchen drawer instead of taking up counter space. My wife and I received a very nice Zwilling J.A. Henckels knife block set for our wedding 15 years ago, but one of the steak knives went missing long ago and recently one of the other knives broke. The remaining knives have some life left in then, but some are definitely starting to look a bit worn out. I figured 15 years was a good run, so I recently starting keeping an eye out for some new knives. I had never heard of the Saveur Selects line, but they looked nice, so I figured I'd give them a try. I am very glad that I did. The knives are attractive & heavy duty. They seem very well made. Other than the brand name, my initial impression is that these knives are actually better than our Zwilling knives that have served us well for the past 15 years. I obviously can't yet attest to how these perform in the long run, but I'll be very surprised if they don't last. The materials and workmanship seem great. They feel comfortable, but substantial in my hand. They are sharp and cut extremely well. This is one of those products that exceeded my expectations. ... show more
