These are excellent! The model is Professional S and are the three sizes you'd need the most. This is the higher model of this company's knives. I bought these for my house overseas as I have the same ones in the US and have been using them for a long time. They've stood up for years and the edges are good. I also bought a block to keep them in which keeps them sharp as opposed to throwing them in a drawer. I got these to replace some of the same that I bought 25 years ago. I actually shouldn't say replace because there was nothing wrong with the 25 year old ones. I just wanted a set to use for camping so I moved the old ones to that task and got fresh new blades for everyday. I really love my Henkels. I consider myself an experienced cooking knife user. I've taken classes on proper techniques which has been super valuable. These are high quality and well built. Sure you can spend more but I doubt you'd get much better results. ... show more
