We created the first OXO mandolin slicer in 2004, and we've been perfecting the art of slicing and dicing fruits and vegetables ever since. The OXO chef's mandolin slicer 2.0 combines the best features from our original mandolin slicer, with some updates to make it even easier to use, like an angled blade and a top-view indicator window to make switching between blade settings quick and seamless. Create up to 21 different cuts with thickness settings in 0.5-Mm intervals, straight and wavy blades, and built-in julienne and French fry blades. Prep like a chef without needing professional knife skills - or a knife at all.

The slicer is quite nice, but the company non-response to a simple question is unacceptable. Through Amazon I asked OXO if replacement blades were available. The initial request required a bunch of data from me to even get the request considered. After my response to them, they sent me a long automated generated form asking for the same info from me. I replied that all I needed was a simple answer to a simple question. Their response was the same long automated form asking for the same info. I COULD NOT GET A RESPONCE, but that isn’t the worst part. With no replacement blades available, this slicer becomes junk when the initial blade gets dull -all blades get dull over time. Then you must replace this junk with a new product – much too expensive for my pay grade. Do you think I’ll send it back? I wish I could give it five negative stars. Edit 1 After getting to talk to someone on the phone, I verified that there are no replacement blades available, and never will be. I inspected the bade carefully and decided that I could sharpen the straight blade with my Chef’sChoice Trizor 15XV sharper. That made it worthwhile to try and work with it. The straight blade was very badly sharpened with severe and irregular deep tool marks on the blade. It was so dull that it was safe to run your finger along the blade edge. It was so dull that it took great effort to slice a potato ¼ inch wide slice. I doubt a female could do it at all. The tool marks on the replacement were a little more uniform, but the blade had gained very little sharpness. A knife sharpened with my chef’sChoice sharpener can be sharpened until it will slice copy paper, and that is the standard I use for knife sharpness. The new blade would just bend the paper and not attempt to slice it – not acceptable. Sharping the new blade was in order. My sharpener gives a good idea about the hardness of the metal of a knife by how long it takes to sharpen the knife – the harder the steel the longer time it takes to sharpen. OXO claims that the metal is high grade Japanese steel which is very hard. This blade required the most work I have ever done on a knife. All the tool marks had to be removed and the edge redefined. It took about an hour to complete the work meaning that it is very hard steel, and it will slice copy paper with ease. It will now also slice ¼-in potato slices with ease. I believe it will do a very good job on any straight blade only job. But that’s not the end of the story. None of the vertical blades can be sharpened because of their design, and I can’t figure a way to sharpen the wavy blade. But that doesn’t really matter because I believe all the functions except straight blade slicing are useless – yes useless. Safety This is a good-bad situation. The food handler design and operation make for very safe operation while slicing. But As has been reported, the blade is held in place by friction only. There is a little friction when the wavy blade is visible, and almost none when the straight blade is visible. With the straight blade visible, it will slide out of the mandolin if you turn it on its side and just shake it gently. This is certainly a design defect. A lock should have been provided to remove this hazard. This hazard may be enough to keep you from buying this mandolin. Conclusion If you can’t live with the safety hazard, or sharpening requirements, or use of the straight blade only, DON’T BUY IT. I have not made the mandolin safe in transportation and storage. Edit2 I make a water proof strap wide enough to cover the blade area and long enough to wrap around the table with a loop holding the blade in place and the whole thing secured with hook and loop tape. I feel that it is now safe, and if you can put up with all the problems, you may like it. ... show more

  • Not the sharpest knife in the drawer

I think America's Test Kitchen got it right -- the Oxo mandoline is tied for the best on the market -- but the slicing blade really isn't very sharp. That makes it problamatic for slicing soft stuff, like tomatoes. The good features are a high degree of stability and ease of adjustment for slicing. The safety is fairly high with a food holder that's generally easy to use. The brand that's tied may be more difficult to use (although it's a favorite of professionals) but it has a much sharper blade. For slicing potatoes or other firm vegetables (summer squash, carrots) the Oxo is excellent, but for soft stuff (tomatoes again) a sharp knife, a serrated edge knife, or a mandoline with a knife edge blade, would be a better choice. ... show more

I absolutely loved this product: it cut like a dream, the safety features are great, the slice size options and accuracy and the changing of the blades was perfect, storage was very convenient. Unfortunately, I have small hands and I couldn't get a good grip on the food holder. It rolled out of my hand couple of times, and this was frustrating to me. I don't know if, with time, I would've gotten the hang of it, but I don't think I will since the efficiency of the OXO products usually lies in their comfortable and perfect fit, This is officially the first OXO product I returned since I started buying OXO 20+ years ago. ... show more

I have processed 10# of cucumbers for pickles and 6# of onions for soup in just two days. It is very easy to set in inches and mm. Blade change is a snap. The hand guard is super safe and efficient. The blades are very sharp. It’s extra easy to clean and stores small. This is a replacement for my 10 year old OXO - design is an improvement and I expect it to last longer than the last. I'm not sure it's worth the 'twice as much as others' price tag. It's a big tool and you'll need to plan on where you'll stash it when it arrives. But, it seems to be pretty sturdy. I would say some of the functions it professes are a little flimsy. I sacrificed a potato to try out the 'waffle cut' setting. I mainly got some thin potatoes slices that were half waffle-half potato strings. I do like that all of the different cutting options are built into it, so you don't have to store a lot of different blades. Generally, it's an ok device, but pricey for what it is. ... show more
