So, I'll be honest. I wasn't too sure when I ordered this if I would like it. After all, they say you should never watch sausage being made, and you are making something like sausage with this press. On the other hand, when you make it, you control what's going into it. You can make your own low sodium versions of popular lunch meats, make just enough that you dont need chemical preservatives, and can customize recipes to your liking. Basically, this is a heavy duty press. You grind up your ingredients as fine as you want them, load them into the press, engage the spring lid, and then cook the meat, usually in a water bath. You'll need a fairly deep pot for this step. There is an internal thermometer to let you know when the cook is done. After that, cool the meat in a refrigerator for a few hours, then you are free to slice and serve. It says it is a ham press, but you can make almost any kind of suasage or loaf type lunch meat you want, from bologna to salami or pepperoni, olive loaf, and so on. You could make your own version of spiced ham lunch loaf if you'd like (Avoiding Trademark infringement by refusing to mention unwanted advertising emails). Using the press is easy, as is cleanup, but if you want to make it easier, you can use the optional cooking bags. I thought they were more trouble than they were worth, but you get 5 for free, so you can try them out and decide for yourself. I like the press; it feels solid and well made, and the spring is strong enough to put good compression on your food, which makes for an easy to slice lunch meat. Yes, there's work involved; it will always be easier to just run to the store and buy a pack of lunch meat. BUt the effort to make it yourself gives you complete control over what is added to your lunch meat, and that's worth the work for me.

I am slowly developing my meat processing skills. This kit is very easy to use and I am getting my recipes dialed in. It is the perfect size for making bologna and other tasty meats. There are so many recipes online. I especially like making turkey and chicken lunch meat. It is very well made and fits easily in my stew pot. With this small investment, I am able to decide what ingredients I put in my lunch meat and save money in the process. I have been able to make some tasty salami with simple ingredients. I like the spring loaded lid that keeps everything pressed together to form the loaf. It works very well. It is easy to maintain. I hand wash everything after each use. The temperature gauge makes monitoring the process very easy. We love trying new recipes and improving my skills.
