Description

Miyabi celebrates Japanese craftsmanship with the Mizu SG2 Chef's Knife. Using traditional methods and innovative techniques, these knives merge the past and present into one exceptional knife collection. The SG2 micro-carbide powder stainless steel core is wrapped in another layer of stainless steel with a hammered ("Tsuchime") Damascus finish. The Cryodur heat treatment process results in a blade with a high Rockwell Hardness rating of 63, providing superior edge retention, corrosion resistance and blade flexibility. Miyabi artisans then perform the Honbazuke sharpening method that originated from traditional Japanese sword making. This 3-step process includes sharpening the blades twice on whetstones, followed by mirror polishing on a leather wheel. Used over 1000 years ago for samurai swords, this is what gives these knives their signature Miyabi razor sharpness. The meticulously crafted blade is then accompanied by a stunning, comfortable and durable D-shaped Micarta handle and stainless steel bolster. Beautiful accents adorn the handle including a decorative mosaic pin, red spacers, the Miyabi logo engraved on the handle end. Handcrafted in Seki, Japan.

  • Exceptional quality and sharpness
Size: 6-inch
Exceptional quality and extremely sharp. These are for serious cooks who take care of their utensils. Enjoy cooking and get ready to appreciate Japanese knives. Just be extremely careful and do not let kids or teenagers use these. Razor sharp . Hope this helps. Also, they look amazing !!!!! Well worth the price. Don’t forget that this knife can chip if you are not careful. It has a very thin blade so it makes sense if you drop it or try and shop frozen items. ... show more

  • What can I say?
Size: 8-inch
Wow this knife is a lot different then the old Cutco chef's knife I have been using for years. After getting a gift card for my Bday I decided to take the plunge on a real knife. I consider myself a pretty good cook and enjoy making meals for family and friends. I figured if I am using it everyday it would be well worth every penny and it has been for sure. The blade is well balanced and the steel is hard as hell so it retains an edge like no other stainless blade can. When it hits the cutting board the sound of it even sounds different then typical stainless steel. I really look forward to meals that require a lot of vegetable prep. Trimming cuts of meat is super easy- the blade slides right through with no resistance. It even looks cool laying on the cutting board! Just be careful- I almost took off the tip of my index finger the first night I used it. You have to adapt your holding technique if you are used to using semi dull knives. Perfect size and blade length for most work you will do in the kitchen on a daily basis. A pure pleasure in the kitchen for sure, maybe even an heirloom for the kids... Even bought a whetstone to keep it sharp. Just make sure to practice on your old knives before using on your new beauty. Expensive but worth it! ... show more

  • Fantastic knife!
Size: 9.5-inch
This was my first foray into more expensive knives and this was worth the $$. It cuts through everything with ease, is gorgeous, and holds an edge remarkably well.

  • Well balanced and scary sharp!
Size: 6-inch
I received a nakiri of the same brand and was very impressed with the workmanship and sharpness of it. This knife is the same quality and holds a razor sharp edge very well. It's not cheap, but it's worth every penny for a knife of this caliber.

  • Best Knife We've Ever Owned
Size: 9.5-inch
I don't ussually bother writing reviews, but I stopped what I was doing to write one for this knife. I use it for everything it seems. I sharpen it each time I use it with 3 or 4 quick swipes...and it cuts through everything. I just cut the spine out of a chicken to spatchcock it...and cut open an acorn squash. But it also makes mincing an onion pleasurable....cutting carrots a breeze. I've had it for seven months and made cooking so much more pleasurable. My husband and I are big fans. I would definitely recommend. ... show more

  • The best knife I own
Size: 6-inch
I have a collection of kitchen knives, including Shun, Wusthof, Global, and some others. This is my favorite. You can get a great VG10 from other producers, but SG2, 63 hardness, at this price, is a gamechanger. You need to pair it with a good cutting board, though: hinoki wood, synthetic rubber or wood fiber. ... show more
