Right out of the box extremely sharp, and well balanced. Included in the box were instructions for care and sharpening; unfortunately they are in japanese. Other than that, this seems to be an excellent knife - not the most expensive Misono, but it appears to be a nice balance of quality and price. So far, out of the box, I'm happy, but I will attempt to update this rating after I use it for a while. UPDATE: I had not used this knife in a while, but I had the opportunity today. I had to chop some bermuda onions and cut some veggies,and I thought this would be a good chance to once again try the Misono. My, what a pleasure to use this knife. I do not care for the term "like a hot knife through butter" but this knife cuts effortlessly, and I plan to use it whenever I can. It felt like cutting through room temperature butter while slicing vegetables. I am very pleased with the quality and use it nearly every day.
