I have another high end, quality chef's knife from Japan that's more than 10x the price. I love that knife too, but there's no difference in performance between them. Dependable and durable. I was looking for a basic restaurant style knife, as I can't stand the expensive thicker blade knives, which none will ever perform as well as a well built, basic thin blade knife, and this has got to be one of the best. Great grip, nice thin blade which cuts way easier than any of the expensive thicker blades, and holds an edge just fine. I've used it for a few months, and I usually give it a few swipes on a steel once to three times a week, depending on use. Haven't used a stone once, and it's just fine. Buying a super expensive knife because they said you will never have to sharpen it, doesn't make it a better knife. I liked the 10" chef knife's use for chopping whole cabbage heads into thin ribbons for cole slaw, stirfry veg prep, and meat morsel prep. The hand, finger and pinch indent and balance works will in my large hands and has a nice rocking motion. It arrived sharp and has stayed sharp with light touches on a steel. I store it on a magnetic bar, otherwise it'd be awkwardly big in the drawer. Hand wash after every use leaves a clean, shiny surface. Others in the house don't care for it as it's too big for them, instead preferring 7-8" blades. Inexpensive and good quality, this blade is great to have even if it's just for one cook. ... show more

I would recommend this knife to anyone who needs to get work done. It keeps a razor's edge through about 40 hours of slicing and chopping against hard plastic cutting boards. It's nice in the hand and will cause no strain from extended periods of use. I don't know that I'd recommend this to a home chef, unless they were the kind of person who likes to sharpen their own knives regularly, but even then this knife is much more at home in the hand of a professional; its size allows for so much versatility and efficiency when cutting. A home chef would probably be better off using a smaller chef's knife in combination with other smaller knives, whereas this has to be a jack of all trades in restaurant kitchens. ... show more

  • Best knife for the money. Mercer is my favorite.

This knife and one other extra wide Mercer chef knife along with a great sharpening steel and carrying bag I bought for work at the restaurant. You know when the house knives get dull and the knife guy isn't due for a week to exchange them for sharpened ones. Well I have to still chop, dice, and slice tons of foods so I now can break out these Mercer 10 inch chefs knives and be assured a nice sharp blade and way more comfortable grip that doesn't leave your hand hurting. The steel works very well every time bringing that quality edge right back after dicing 60 pounds of ham. Slicing tomatoes is fun now lol. Gets through those onion peels easy. I really like Mercer knives. I have used them a long time. The price is really nice too. ... show more
