This is the best chef's knife I have ever had. It came out of the box razor sharp. It's an absolutely beautiful piece of hardware, the pictures do not do it enough justice. My jaw dropped when I opened the package and the first time I saw the knife it’s got weight to it more towards the handle and the quality was excellent and the wood and overall the whole knife was so beautiful

This is a nicely made chef's knife. The handle is a bit thin, but the balance is great and it is easy to get used to. I'm sure the people who rave about how sharp this is have just never owned a sharp knife. I was a meat cutter and produce clerk in my early life and learned how to keep a knife sharp. But, this is very nice steel and it didn't take too much work to get it up to standards. I bought this as a travel knife to take on vacations because AB&B knives are always terrible. I think this will do nicely.

I have been building my collection of Hammer-Stahl knives over the past year, ever since my local kitchen emporium recommended them. I really enjoy how sharp they stay; the feel, including the materials the handle is made of; and their practicality. When I saw there was a 10" chefs knife, I knew I had to have it. And it has not disappointed! I cook five or six times per week for our family, and I use this knife 99% of the time. It's quite large, so you do need some decent knife skills (or patience/safety) to use it effectively. But what a joy to use! I can't wait to use it again :)

This knife is the perfect size for me to handle as a chef's knife. It's very sharp and weighted perfectly. When an 8" chef's knife was too much knife for me to cut veggies with, this one is perfect. And it nicely trims & cuts raw meats as well. Highly recommended!

Professional Chef. Not worth $80 to me. Handle is very small for a 10” chef knife, doesn’t have the “heft” I want in a knife. Almost seems like a child's knife or a part of the knife is missing. At this price point there are much better knives out there. I don’t know why or how a small handled knife would be beneficial.
