Description

The slightly longer curved ergonomic handle provides a comfortable grip and features 7 signature black dots which represent the 7 Samurai codes of honor and moral principles. The beautiful hammered finish applied to the patented Cordova 18 core (Chromium, Molybdenum, Vanadium and Carbon) produces air pockets which help release food while cutting, giving the blade non-stick properties. Legendary industrial designer Komin Yamada brings a new age of innovation to Global cutlery with Sai, unifying function and design, these distinctive Japanese knives combine revolutionary ergonomic handles with triple-layered steel blades that maintain their exceptionally sharp edges. The first new cutlery line produced by Global in more than 25 years, Sai blends the Japanese company's tradition of craftsmanship with modern technological advancements. The knives combine three layers of steel: a core of patented, ultra-hard Cromova 18 Sanso stainless-steel alloy and two outer layers of more flexible 18/8 steel for added strength and resistance to rust. Professional-quality blades are ice-hardened and tempered to increase hardness, resist corrosion and maintain long-lasting sharpness. Each blade is hand-hammered to create hollow air pockets that reduce drag, allowing the blade to glide through food without sticking. 12.5-degree blade edge is mirror-polished by hand for exceptionally long-lasting sharpness. The perfectly balanced handle has an ergonomic thumb rest for a smooth, efficient cutting motion and steady, comfortable grip. Made in Japan. High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Thinner blades result in lighter knives. (Global also makes a "heavyweight" line for cooks who prefer hefty knives.) Though most Global knives have hollow handles, the handles on the four steak knives in this set are solid. Their 3-1/2-inch blades are finely serrated on one side. They also are among the few Global knives with bolsters. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen Sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges.   • Show your filet mignon some respect and dine with these magnificent steak knives.
Growing up in an Italian household, eating is more of a sacred ritual to be savored and enjoyed, than an inconvenient chore to rush through. But almost equal to the food itself, is the presentation and using dishes, glasses and cutlery that is an investment that will give years of service, as well as enhance the dining experience by their functionality, tactile sensation and design. Owning a quality set of preparation knives is an investment that can last generations and makes meal preparation seem effortless. But sometimes, investing in knives to dine with, especially for eating cuts of meat, isn't even considered; aren't there already knives with my flatware set? Yes, of course, but they usually lack the sharpness and cutting ability of a quality designated steak knife, as these great knives from Global. The weight of the knife in your hand feels substantial and well balanced as they are heavy stainless steel their entire length. There are no wooden or plastic parts stamped together to wear over time and perhaps come loose or lose their finish. The rear shank has indentations to give the knife some stylistic texture as well as a better grip. The blade is serrated and sharp and cuts effortlessly. While they could be thrown into a dish washer, I prefer to hand wash them which takes just seconds to avoid having the blades thrown around and receive possible damage and dulling. Knives like these you will only need to buy once and perhaps then pass them on as an heirloom. I've been very satisfied over the several years I've owned them and highly recommend them if your'e looking for a quality set of steak knifes. ... show more

  • Trully Impressive Knives
We had purchased some of the other Global knives and we very impressed with the quality & construction, but kept putting off buying the steak knives wondering if it was worth the price. You know, they are steak knives. How good can they be? After getting the first four, I have to say these are one of the best knives in the Global line! (The 3-1/2" paring is amazing as well) The balance is perfect, and they cut steak like it has no resistance. Guests make comments about how well they work & the unique styling. When is the last time anyone made a comment about steak knives to you other than it's dull? Buy them, you will be trully impressed. ... show more

This is our second set of these. They're really easy to cut even the toughest steak with and hold their edge for a LONG while. We bought a second set to be able to have 8, The trays they come in are great for storage, and two fit stacked in our silverware drawer (standard height).

We got these yesterday and tested them out on ribeye last night. Great as expected. I am a huge global knife fan. With these I count 14 knives, plus a knife block and a sharpening rod. Also a number more bought for the foodie college kid. Stainless so they never rust, put them in the dishwasher if you are careful. Modern looking, one piece so the handle is never going to fall off. They stay sharp a long time - but get a sharpener made for them like the ones Amazon sells. Other sharpeners are made for thicker knifes and will destroy these. ... show more

  • Paring knives sent instead of steak knives.
The knives had short blades and looked like paring knives. I complained and got no response. Not a good purchase at all!

  • Great Steak Knife
I'm a pretty serious Global knife owner/user. Everything I cut with is Global, and I have bought way too many. Including a 30cm sword. :) Bought these as a wedding gift for a good friend. Got to use them the other night and was quite impressed at how well they cut. The shape is perfect (if a bit modern), and they share the same excellent qualities with the Global chef knives.
