Global kitchen cutlery is meticulously forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium, which provide superior edge retention. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper, rather than a short bevel, so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor sharp. Although Global also makes a heavyweight line for cooks who prefer hefty knives, its original knives--of which this 4-1/4-inch paring knife is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Global achieves balance on these knives by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as the cook maneuvers the blade. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp, and the seamless construction between handle and blade is more sanitary. This knife's wedge-shaped handle is particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen Sharpener. Global also makes a sharpening guide set so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. Love, love, LOVE this knife! I was fully expecting to pull out my whetstone when this arrived to sharpen the factory-edge - but I've had it a couple months now (it gets lots of use) and the factory edge is still wickedly sharp (I hone before use, to maintain it). I had a MAC before this and it developed a couple tiny rust spots and a chip popped out of the blade within a week of purchase, so even though I've never bee partial to the handle design, I opted to give Global a whirl. This little knife has made me a fan and I will definitely consider more Global products down the road if needed. Well balanced, holds the edge well, it's my favourite go-to, even more than my chef's knife. My only caveat - watch when cleaning it because with no bolster, the heel of this puppy can find it's way into a finger pretty quickly. ... show more

I like the feel of this knife, and reach for it more often than any other small knife in the kitchen. It is a real joy to use when sharp. The only disadvantage I've experienced is that it doesn't hold an edge for long, especially as frequently as I use it. I also find it does not sharpen up well with a ceramic or metal steel. A stone works fine if you have the time and talent, but I've actually found the easiest way to keep it razor sharp is with one of those inexpensive hand sharpeners, such as the Wusthof Precision Edge Sharpener, which I use to touch it up after every 3 or 4 uses. ... show more

This paring knife matches the set my wife has. She loves them all. But, I should have looked harder and found that Global has a shorter bladed paring knife. The length of this knife is about the same as our stake knives.

It's Global, so between the high quality steel and the 10 degree edge, it is ridiculously sharper than any other blade on the market. Definitely not for the amateur home cook, but if you have to prep several pounds of product, this is the tool you want to have. This is a perfect small/mid-size knife. It comes razor sharp out of the box and has no difficulty handling any task appropriate for its size. It came sharp enough to thinly slice the seed of an avocado, not that you would ever want to. It fits well in my medium/large hands. This knife is fantastic.
