  • Another "Japanese Style" knife, but this one seems good
There are dozens of knives on Amazon that look exactly like this one, so I had low expectations. Most of them likely come from the same handful of factories, and the differences are usually cosmetic. This one surprised me a bit. It is very sharp, genuinely razor sharp, the kind of sharp that feels a little dangerous in a good way. For a fillet knife, that is what you want. I have used it about half a dozen times so far on fish and chicken, and it still slices cleanly with no real drop in sharpness. The blade has the right amount of flex for trimming around bones or getting under skin without feeling flimsy. The handle is easy to use, comfortable and grippy enough that I never felt like it was going to twist in my hand. I cannot speak to long term durability yet. High carbon blades can rust if you are careless, so I am hand washing and drying it immediately. So far, no discoloration or issues. Edge retention has been better than I expected given the price. If you already own a premium Japanese fillet knife, this is not replacing it. If you just want a very sharp, functional fillet knife that costs far less than it looks, this does the job well. The main selling point is the edge. It is sharp enough that you actually need to pay attention while using it, and that alone sets it apart from a lot of the cheap clones. ... show more
